Ingredients and Substitutes
Cooked chicken, shredded (2 cups) – If you don’t want to cook chicken, you can use rotisserie chicken for convenience. You can also substitute it for turkey or tofu for a plant-based option.
Riced cauliflower, uncooked (1 cup) – You can use fresh or frozen cauliflower. You can also try using broccoli as an alternative or a mix of both options.
Bacon, cooked and chopped (6 strips) – If you are looking for a leaner option, switch to turkey bacon.
Garlic powder (1 tbsp) – For a stronger flavor, you can use minced garlic, but if you are feeling “lazy,” you can use garlic flakes.
Onion powder (1 tsp) – You can also use chopped onions or onion flakes.
Italian seasoning (1 tsp) – Don’t skip this ingredient since it adds a lot of flavor. But you can add other herbs and spices like thyme or rosemary.
Salt (1/2 tsp)
Black pepper (1/4 tsp)
Cream cheese (1/2 cup) – Be careful if you choose low-fat cream cheese since most of them are higher in carbs, which can throw off the net carb content.
Heavy cream (1/4 cup) – You can use coconut cream for a dairy-free and plant-based option.
Cheddar cheese, shredded (1 cup) – Any hard cheese like gouda or mozzarella can work as well.
GARNISH
Parsley, chopped – Don’t use dried parsley since you want to add some freshness to the dish.
How to Make Keto Cauliflower Casserole
Step 1. Preheat the oven to 350F and prepare the casserole dish by spraying it with oil. Grab a large bowl and add all the ingredients (except for the cheddar cheese and parsley).
Step 2. Mix everything until it’s well mixed. Once it’s combined, mix in ½ cup of the cheddar cheese.
Step 3. Transfer the mixture to the casserole dish and level it out with a spatula.
Step 4. Grab the rest of the cheddar cheese and place it on top of the mixture.
Step 5. Place it in the oven and bake for 20 minutes until the cheese gets bubbly and golden brown.
Step 6. Take it out of the oven and garnish with chopped parsley before serving to add some freshness to the dish.

I know that if you have any leftovers, you are going to want to store them. Proper storage is key to keeping the meal fresh and delicious.
To place it in the fridge, make sure you allow the casserole to cool completely before you place it in an airtight container. You can keep this meal in the fridge for up to 4 days.
For longer storage, you can place this casserole in the freezer. I do recommend portioning it into individual servings and then placing them in a freezer-safe container.
This can make it easier to reheat and avoid waste since you reheat only what you are going to eat. By placing it in the freezer, you can keep the casserole for up to 3 months.
Once you are ready to enjoy the leftovers, place them in the oven at 350F until it’s warmed through. I recommend not using the microwave since I’ve found that it results in soggy cauliflower (and nobody wants that).

Ingredients
- 2 cups cooked chicken shredded
- 1 cup riced cauliflower uncooked
