As you know, I love a good casserole. This quick and comforting casserole mixes all my favorite ingredients: bacon, ranch, and cheddar cheese.

It is a delicious, creamy, and rich meal that you will want to go back for seconds. So, keep your portions small, haha! 😆

You can always modify the recipe to your liking. For example, I’ve tried adding mushrooms, switching the cheese, and mixing the cauliflower florets with broccoli florets, and it always turns out just as delicious as the original recipe.

Ingredients and Substitutes

Bacon (6 slices) –  A must here.

Cauliflower florets (3 cups) – If you want to switch things up, you can use broccoli florets. You can even use a combination of both the cauliflower and broccoli florets.

Chicken breast (1 lb) – For a less meaty option, you can use tofu.

Garlic (4 cloves ) – For those who are looking to save time while cooking, you can use garlic flakes. You can also keep some minced garlic in olive oil to use as needed.

Ranch dressing (½ cup)  – Don’t skip this crucial ingredient since it adds flavor and creaminess.

Cheddar cheese (1 cup ) – While I prefer using cheddar cheese, I have also tried using Colby Jack, pepper Jack, or mozzarella (or a combination of all of them).

Salt (½ tsp)

Black pepper (¼ tsp)

Fresh parsley – Don’t use the dried version since it adds a fresh element to the dish.

How to Make Keto Chicken Bacon Ranch Casserole

Step 1. Grab a 9×13 casserole dish and preheat the oven to 375F. Place a skillet on medium-high heat and add the bacon slices.

Step 2. Cook the bacon slices until they are golden brown and crispy. It will take around 5-7 minutes. Remove them from the pan and place them onto a plate that has a paper towel to absorb some of the fat.

Step 3.  Bring a pot of water to a boil and add the cauliflower florets. Cook them for 3 minutes. Remove them and let them cool down. Once they are cool, chop them up.

A nice little hack to cool them down quicker is to run them under cold water in a sieve.

Step 4. Place the cooked bacon, chopped cauliflower, shredded chicken, garlic, ranch dressing, and ½ cup of the shredded cheese into the casserole dish. Add salt and pepper to taste.

Step 5. Mix all the ingredients thoroughly until they are well-blended. Grab a spatula and level everything out.

Step 6. Grab the remaining ½ cup of cheddar cheese and sprinkle it on top of the casserole. Bake it in the oven for 10-15 minutes until the cheese has melted.

Step 7. Once it’s ready to serve, garnish it with chopped parsley.

One of the many things that make this recipe incredible is that you can store it in several ways. If you bake it and have some leftovers, place them in a glass container and keep it in the fridge for 3-4 days.

If you love meal prepping, you can place this recipe in the fridge freezer, cooked or uncooked.

For those who want to have it uncooked, you can place a baking dish in the freezer and leave it there for up to 1-2 months. Once you are ready to have it, defrost it and place it in the oven.

But, the good news is that you can also keep it in the freezer after you cook it in the oven.

Keto Chicken Bacon Ranch Casserole

This keto chicken bacon ranch casserole is cheesy, creamy, flavorful and filling. It's low carb, high protein and gluten-free.

Ingredients 

  • 6 slices bacon diced
  • 3 cups cauliflower florets
  • 1 lb chicken breast cooked and shredded
  • 4 cloves garlic minced
  • ½ cup ranch dressing
  • 1 cup cheddar cheese shredded
  • ½ tsp salt
  • ¼ tsp black pepper
  • Parsley chopped

Instructions 

  • Preheat the oven to 375F. Prepare a 9×13 casserole dish.
  • Heat up your skillet to medium-high heat and add in diced bacon slices. Cook them up until the bacon is crispy and golden brown. Remove from the pan onto a plate with kitchen roll on to absorb the fat.
  • Bring a pot of water to a boil, add in cauliflower florets, and boil them for 3 minutes. Remove and let them cool down. Chop them up.
  • Add cooked bacon, chopped cauliflower, shredded chicken, garlic, ranch dressing, 1/2 cup shredded cheddar cheese, salt and black pepper into the casserole dish.
  • Stir all of the ingredients until they’re combined well. Level it out.
  • Top up with the remaining 1/2 cup of cheddar cheese and bake in the oven for 10-15 minutes until the cheese has melted on the top.
  • Garnish with chopped parsley before serving.
