I have to admit that sometimes, I struggle with finding new ways to add vegetables to my meals. I know that I can add the typical green salad or grilled vegetables.
But when I need something quick and easy, I struggle. That’s where casseroles come in!
This chicken broccoli bake combines all the ingredients you need to provide your family with a hearty meal that is high in essential nutrients.
With each bite, you’ll get a combination of cheese, chicken, and broccoli. All mixed with cream cheese to provide a delicious creamy recipe.

Pin ItWhat I love about it is that you can add other rich ingredients, such as bacon or sausage, to modify it. You can also add more veggies to boost its nutrition, such as cauliflower, mushrooms, or eggplant.
The recipe is a quick lunch or dinner you can make at home. But you can easily meal prep it for you to take to work the following day.
Ingredients and Substitutes
1 1/2 cups diced chicken breast – While you can also use ground beef, I recommend sticking with chicken. You can make it plant-based if you switch to tofu.
4 cups broccoli florets – Try adding other vegetables, like the ones mentioned before (mushrooms, cauliflower, and eggplant).
1/2 cup cream cheese – Use full-fat cream cheese. The low-fat version is not as creamy and it can end up modifying the texture and flavor for the dish.
2 tbsp mayonnaise – If you don’t have mayonnaise, you can use Greek yogurt to add some creaminess to the dish.
¾ cup cheddar (grated) – Try combining different cheeses to make the dish your own. You can use pepper Jack, Colby cheese, or gouda. Use high-fat cheeses since they melt better than low-fat cheeses.
1/2 tsp garlic powder – You can also use garlic flakes.
½ tsp onion powder – Just like garlic powder, you can use onion flakes.
1/4 tsp salt
1/4 tsp black pepper
How to Make Chicken Broccoli Bake
Step 1. Grab a baking dish and spray it with oil. Preheat your oven to 375F.
While you wait for the oven to heat, boil a large pot of water and add the diced chicken and broccoli once the water is boiling. Cook them for 5 minutes or until the broccoli is tender and the chicken is fully cooked.
Step 2. Drain the water from the pan and set the chicken and broccoli on the side.
Step 3. In a large bowl, mix the cream cheese, mayonnaise, grated cheese (½ a cup), garlic powder, onion powder, salt, and pepper. Mix until everything is well blended.
Step 4. Grab the chicken and broccoli and combine it with the cheese mixture inside of the baking dish to avoid having even more dishes to wash. Grab a spatula and level everything out.
Step 5. Sprinkle the remaining cheddar cheese (1/4 cup) on top of the baking dish.
Step 6. Bake for roughly 15 minutes, and then place it to broil for the cheese to get that delicious golden brown. It should only take 2-3 minutes to broil.
Trust me, a little bit of broiling will be worth it!

I can assure you that your family will not leave much of this chicken broccoli bake after they try it.
However, if you have some leftovers, you can place them in an air-tight glass container to reheat later. Place it in the microwave and have it ready to eat whenever you want a delicious meal.
If you can, reheat in the oven, it’ll taste better. The cheese gets a chance to crispen up that way.
What I love about this recipe is that you can also easily use it for meal prep. Once you cook it, store it in individual portions in freezer-friendly containers.
It will last in the freezer for up to 6 months. When you want one, defrost it and then heat it up in the oven.

I love having this recipe on its own. But, if you want to have a full meal, here are some of my favorite side dishes to have with this recipe:

If you are looking to reduce your carb intake, I would recommend focusing on adding more vegetables. Not only will they add more nutrients to your meal, but they can help you keep fuller for longer.

Instructions

- Sprinkle with the remaining ¼ cup of cheddar cheese.
- Bake for 15 minutes and then broil for 2-3 minutes until the cheese goldens up.

It’s so very flavorful and cheesy, we loved it. My kids wanted more even this had broccoli. I’m definitely going to making it again.
The dish did not fill up the baking dish and the portion size is very off!

This was a dish that surprised me. I chose it because of the small amount of calories, but it truly is such a flavourful dish. My partner and I loved it and has become one of our favourites.
