Meal prepping is what saves me during busy work weeks.
I set aside a few hours and I’m covered for days. Every single one hits 30g of protein or more too.
So here’s my roundup of fall high protein meal preps for work. These are the ones I actually reach for when the week gets hectic.
My favorite from this batch is the Mexican Meal Prep at number 11. Eight spices and seasonings give it that authentic flavor without much effort at all.

1. Cottage Cheese Chicken Enchilada Bowls

When lunchtime comes around and I’m craving Mexican flavors, this is my go-to recipe.
Loaded with shredded chicken, cottage cheese, taco seasoning, black beans, corn, and enchilada-inspired flavors, the bowls deliver an impressive 47g of protein per serving while keeping prep incredibly simple.
It takes 6 minutes to prep and 2 minutes in the microwave! Lunch doesn’t get faster or tastier than this.

2. Sweet Potato Taco Bowls

Caramelized sweet potato, seasoned ground beef, and black beans fill most of the bowl, with cherry tomatoes, corn, and avocado layered on top. Everything portions out into containers in under 30 minutes. It travels well, which matters most when lunch has to survive a commute and a fridge at the office.
With 34 grams of protein, it holds you over through a full afternoon of meetings. Packing the fresh toppings separately keeps the sweet potatoes from getting soggy by day three.
I started making a big batch of these on Sundays specifically so I’d have something to grab before heading out the door. A coworker once asked what I was eating because it smelled so good reheating in the break room microwave. Ever since, this has been my answer to the boring desk lunch problem.

So, my solution – this high protein meal prep. Packing 31g of protein and veggies for all that delicious fiber.
And of course, some pasta to hit all the right spots and satisfy the inner hunger. I also just love how easy it is to make.

Buffalo is one of those flavors I never get tired of. But takeout is not what you want when you’re trying to follow a healthy diet.

To keep it extra healthy, I coat the boneless chicken breasts in a seasoned tapioca starch instead of using heavy breading.
