Ingredients You’ll Need

Chilli powder (2 tsp) – If you like some heat, opt for a strong, fiery one.  It will boost your dish and bring some smiles all around.

Garlic powder (1 tsp)– This is a helpful ingredient to have in the store cupboard as it can add some quick garlic taste to a dish, perfect if you are in a hurry.  You could use minced garlic here instead if you wish.

Smoked paprika (1 tsp) – The sweet smoked paprika is delicious, but you could use a regular one too.

Cumin (1 tsp) – Use already ground cumin or seeds that you gave freshly ground yourself; this will heighten the taste of this delicious spice.

Salt (1 tsp) – Sea salt or regular salt would be perfect here.

Black pepper (1/2 tsp) – Use freshly ground pepper if possible, as it provides a really intense flavor.

Olive oil (2 tbsp) – This can be your usual cooking olive oil, so you don’t need to use an expensive extra-virgin variety.  You could use avocado oil or coconut oil instead.

Chicken breasts (1 ½ lbs) – Choose plump, free-range/organic chicken breasts for the best quality.  You will find this meat is very juicy and full of taste.

Bell peppers (3) – Red, yellow, orange, and green- are perfect for this dish, so use whatever combination you like.

White onion (1, medium)– White onion or red onion could be used for this dish, so take your pick.

Lime (1, juiced) – This citrus pairs perfectly with the fiery heat and warm spices of fajitas. You could use lemon if you cannot get hold of lime, though.

Cilantro – The freshness of this herb will elevate your fajitas, but you could use fresh parsley instead.

For Serving

Corn shells (12) – You can use readymade corn shells here, but you could also use flour tortillas or gluten-free wrap options.

Sour cream, grated cheese, guacamole, salsa (optional) – Take your pick with what to serve with your fajitas; just be generous!

How to Make Sheet Pan Chicken Fajitas

Step 1. Preheat the oven to 400F and oil the baking sheet. In a bowl, combine the chilli powder, garlic powder, smoked paprika, cumin, salt, and black pepper.

Step 2. Add the olive oil and stir well to combine well.

Step 3. Put the chicken strips onto the baking sheet and pour over the mix of olive oil and spices. Toss or stir well to coat the chicken meat.

Step 4. Add the bell peppers and onion to the sheet pan and stir well to combine with the chicken, oil, and spices. Place in the oven and bake for around 20 minutes or until the chicken is fully cooked.

Step 5. Squeeze out the lime juice using a juicer like this one, and sprinkle it all over the sheet pan and ingredients. Scatter the chopped cilantro over the top.

Step 6. Serve in tortillas and whatever toppings you like.

Came out great. I added a bit of lemon juice and more oil directly into spice, mixed chicken a bowl to coat, dumped in biggest sheet pan I own. Mmm! Thanks for the recipe.
