Ingredients and Substitutes

Butter (1 tbsp) – If you are looking to have a dairy-free option, you can use coconut oil. And, if you are looking for a creamier option, you can use ghee.

White onion, chopped (1/2 large) – You can also use shallots or green onions as an alternative. However, I like the sweetness of white onions, so I recommend using them if you have some.

Garlic, minced (3 cloves) – You can use minced or powdered garlic if you are out of fresh garlic.

Broccoli florets (3 cups) – This is the star of the dish, so I recommend keeping it. However, you can also use cauliflower or a combination of both.

Chicken broth (4 cups) – For a plant-based alternative, you can use vegetable broth.

Heavy cream (1 cup) – This provides a creamy texture. If you don’t have heavy cream, you can use coconut oil.

Garlic powder (1 tsp) – You can also use garlic flakes if you don’t have garlic powder.

Salt and black pepper, to taste

Cheddar, shredded (3 cups) – This gives the soup its signature taste. You can also try using other cheeses like Gruyère or Monterey Jack if you feel like experimenting.

Xanthan gum, optional (1/2 tsp) – You can use this keto-friendly thickener if you want a thicker consistency. But, you can also skip it if you enjoy the texture of the soup without it.

How to Keto Broccoli Cheese Soup

Step 1. Grab a large pot and place it over medium-high heat. Add the butter and chopped onions. Sauté the onions until they become translucent, which should take roughly 3 to 5 minutes. 

Step 2. Add the minced garlic and cook for another 30 seconds.

Step 3. Add the broccoli florets.

Step 4. Pour in the chicken broth and the heavy cream into the pot.

Step 5. Add the garlic powder, salt, and black pepper. Mix until everything is well blended.

Step 6. Bring everything to a boil. Reduce the heat and let it simmer for around 10 minutes.

Step 7. Remove from the pot from the stove and add the shredded cheddar cheese. Make sure to do it cup by cup.

Always make sure to keep stirring to avoid clumping. If you are going to add the Xantham gum, you can add it now to thicken the soup.

Step 8. Once it’s ready, serve in bowls and sprinkle cheddar cheese and chopped parsley on top.

Are you looking to customize this recipe to suit your taste? Now, while I enjoy this recipe as it is, I also enjoy adding different ingredients when I want some variety.

I mean, who doesn’t? Here is the list:

  • Cooked chicken or bacon bits
  • Cayenne pepper or hot sauce (for some spice)
  • Roasted cherry tomatoes or mushrooms
  • Cauliflower florets instead of broccoli

Storage and Leftovers

To store the soup, allow it to cool down and then transfer them to an airtight container. Keep it in the fridge for 4 days or up to 3 months in the freezer.

However, if you are going to keep it in the freezer, I recommend keeping it in individual portions to avoid waste.

A cheesy, comforting bowl packed with broccoli and flavor. It's low-carb and gluten-free.
Servings: 6 bowls

Ingredients 

  • 1 tbsp butter
  • 1/2 large white onion chopped
  • 3 cloves garlic minced
  • 3 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 3 cups cheddar shredded
  • 1/2 tsp xanthan gum optional

Instructions 

  • Place a large pot over medium-high heat. Add in the butter and chopped onion and saute for 3-5 minutes until they soften.
  • Add in minced garlic for 30s and then broccoli florets. Pour in the chicken broth and heavy cream.
  • Sprinkle in garlic powder, salt and black pepper. Stir well.
  • Bring everything to a boil, reduce the heat, and simmer for 10 minutes or so.
  • Remove the pot from the heat, add in shredded cheddar cup by cup, and keep on stirring the soup to avoid clumping.
  • Optionally, add in xantham gum to thicken the soup.
  • Serve in small bowls with a sprinkle of cheddar cheese and chopped parsley.
