This delightful, cheesy recipe brings all the flavors of a cheeseburger into a cozy bowl of soup, and the best part is that it doesn’t contain all the unwanted carbs from a traditional burger.

Ingredients and Substitutes

Lean ground beef (1 lb) – You can also try using ground turkey or chicken instead of beef. For a plant-based option, you can use tofu.
Cream cheese (4 oz) – Avoid using low-fat cream cheese since it may have more carbs than the full-fat option. This can change the nutritional composition of the recipe and affect the next carbs.
Tomato paste (2 tbsp) – If you don’t have tomato paste, you can use crushed tomatoes.
French mustard (1 tbsp) – Don’t skip this ingredient since it reinforces the delicious cheeseburger flavor.
Garlic powder (1 tsp) – You can also use garlic flakes.
Paprika (1/2 tsp) – If you don’t have paprika, you can use cayenne pepper or chipotle powder for a spicy kick and smokiness.

Beef stock (2 cups) – You can switch to vegetable stock for a plant-based alternative.

Cheddar cheese, shredded (1 cup) – This brings the comforting, cheesy goodness. You can also use different types of cheese like Pepper Jack, Colby Jack, or mozzarella.

How to Make Low Carb Cheeseburger Soup
Step 1. Grab a large pot, place it over medium-high heat, and add the bacon.
Step 2. Cook the bacon until it’s crispy brown. It should roughly take around 5-8 minutes.
Step 3. Once the bacon is cooked, remove it from the pot and place it on the side. Add the butter and let it melt. Once it has melted, add the ground beef.
Step 4. Cook the ground beef until it browns, which should take 7-8 minutes.
Step 5. Add in the cream cheese, tomato paste, mustard, garlic powder, paprika, salt, and pepper.
Step 6. Mix everything thoroughly.
Step 7. Stir in the beef stock and heavy cream. Let it simmer for 2-3 minutes.
Step 8. Grab the cheddar cheese and add it to the pot.
Step 9. Mix all the ingredients thoroughly to prevent the cheese sticks altogether. Let the soup simmer for another 5-7 minutes.
Step 10. Once the soup is done, mix most of the cooked bacon (just make sure you leave some for garnish). Allow the soup to cool and thicken for another 7-8 minutes.
Step 11. Garnish with the rest of the chopped bacon and parsley before you serve it.

I’ve got to tell you, I love having this soup on its own. However, when I’m serving this at a dinner party, or I want to make this meal extra special, there are some sides that can elevate the flavors of the meal.
Here are some of my favorite side dishes to have with the soup.
- Low-carb garlic bread: A warm, crusty loaf or garlic bread can complement the creamy texture of the soup while providing a satisfying crunch.
- Side salad: A fresh garden salad with mixed greens, tomatoes, cucumbers, and a light vinaigrette adds a refreshing contrast to the richness of the soup.
- Oven-roasted vegetables: Roasting seasonal vegetables like carrots, bell peppers, and Brussels sprouts brings out their natural sweetness and adds a healthy touch to your meal.

Storage and Leftovers
I know that you are going to enjoy this recipe so much that you are going to want to store any leftovers you have.
To store it in the fridge, make sure it cools off first. Then, place it in an airtight container and keep it in the fridge for up to 4 days.
If you want to store it for a longer time, place it in a freezer-safe container, and you can keep it for 2 months.
Once you are ready to have the meal again, warm it in a pot over medium heat, stirring occasionally, until it’s heated through.

Ingredients
- 6 thick-cut bacon strips chopped
- 2 tbsp butter unsalted
- 1 lb lean ground beef
- 4 oz cream cheese
- 2 tbsp tomato paste

Instructions
- Heat up a Dutch oven or a pot over medium-high heat. Add in the bacon and cook until it’s browned and crispy. It should take around 5-8 minutes.
- Remove the bacon and set aside. Add butter into the Dutch oven, let it melt, and add the ground beef. Break it apart and cook until it’s brown. That will take around 7-8 minutes.
- Now, add cream cheese, tomato paste, mustard, garlic powder, paprika, salt, and black pepper. Give it a good stir until all the ingredients are combined.
- Stir in the beef stock with heavy cream. Let it simmer for 2-3 minutes.
- Now, stir in the cheddar cheese and simmer for another 5-7 minutes.
- Once the soup is done, add in the majority of the cooked bacon, leaving some for the garnish. Let the soup cool down and thicken up for 7-8 minutes.
- Garnish with the remaining chopped bacon and parsley before serving.

Delicious! The only reason I didn’t give it a 5 star rating was because I don’t think it’s all that healthy with the cheese, heavy cream, and butter. But it sure was tasty and tasted like a cheeseburger.
