With just 7 ingredients, you can create something out of this world. Perfect when you want a quick, sweet treat or when you have a weekend brunch.

Ingredients and Substitutes
Eggs, separated into whites and yolks (3 large) – If you want a plant-based option, replace with aquafaba (the liquid from canned chickpeas), use 2 tablespoons per egg white. And, for the yolks, you can use mashed banana or unsweetened applesauce.
Cottage cheese, blended (½ cup) – Replace with Greek yogurt for a similar creamy texture or use pureed silken tofu for a dairy-free alternative.
Cream of tartar (¼ tsp) – Use ½ tsp of lemon juice or white vinegar to stabilize the eggs if you don’t have cream of tartar.
Vanilla extract (1 tsp) – Swap with almond extract or maple syrup if you want a different flavor.
Cornstarch (2 tbsp) – You can also use arrowroot powder or tapioca starch.
Salt (½ tsp)
Honey (1 tsp) – Replace with maple syrup, agave nectar, or coconut nectar for another natural sweetener. If you want, you can also use your favorite sugar-free alternative.
Topping
Fresh blueberries (½ cup) – Any fresh fruit will do. I’ve tried using raspberries, sliced strawberries, or diced mango, and the results are unbelievable.

How to Make Cottage Cheese Cloud Bread
Step 1. Preheat your oven to 300°F and prepare a baking sheet by lining it with parchment paper. Separate the egg white from the egg yolks.
Grab a large bowl, add the egg whites and the cream of tartar.
Step 2. Beat the egg whites until stiff peaks of foam form.

Step 3. Grab a smaller bowl, and add the egg yolks, cottage cheese, vanilla extract, cornstarch, salt, and honey.
Step 4. Mix all the ingredients thoroughly.

Step 5. Now, grab a spatula and gently fold the egg mixture into the egg whites.
Step 6. Be careful not to overmix to keep the batter light and airy.

Step 7. Scoop some of the batter and place it on the baking sheet. Shape them like tiny clouds.
Step 8. Top them with fresh blueberries.

Step 9. Place them in the oven and bake for 20-25 minutes or until the bread turns golden brown.
Step 10. When they are ready, remove them from the oven and let them cool down for a couple of minutes before you transfer them to a wire rack.

Pin ItHow I Would Modify This Recipe
- Add Some Crunch: You can add a tablespoon of ground flaxseed or chia seeds to boost the protein and add some texture.
- For Chocolate Lovers: Add 1 tablespoon of unsweetened cocoa powder to the egg yolk mix and add some cacao nibs or chocolate chips.
- Boost the Protein: Blend in a scoop of unflavored protein powder with the cottage cheese.

My Tips & Tricks
- Blend the Cottage Cheese: Lumpy cottage cheese creates an uneven texture. Use an immersion blender or food processor to create a smooth consistency.
- Don’t Skip the Cream of Tartar: This is a very important ingredient since it creates some stability to the egg whites and makes them voluminous.
- Fold Gently: Overmixing can deflate the gg white and result in dense bread. Fold in the ingredients carefully.
My Storage Tips
To keep your cottage cheese cloud bread fresh, place it in an airtight container. Make sure it’s completely cooled since storing it hot can create condensation and affect the texture.
Wrap them up individually in a paper towel to absorb any excess moisture to keep their texture. Keep them in the fridge for up to 5-6 days.
If you want to keep them for longer, place them in a freezer-safe container for up to 3 months. Just make sure you wrap them individually or place them on a baking sheet.
