How I Modify This Salad

  • Boost the Veggies: Add more color and nutrients by adding diced bell peppers, shredded carrots, cherry tomatoes, or avocado slices.
  • Vegetarian Option: Replace the chicken with chickpeas or tofu for a plant-based option.
  • Make it DairyFree: Swap the cottage cheese for a dairy-free cream cheese alternative of silken tofu blended with a little lemon juice and olive oil to get a similar texture.
  • Add Some Heat: If you like spice, add chili flakes, Sriracha, or diced fresh jalapenos.

How I Store It

Place the salad in an airtight container and store it in the fridge for up to 3-4 days. Make sure you keep it at the top shelf to keep it fresh.

If you are adding other ingredients (like tomatoes and cucumbers), make sure you add them just before serving the salad to avoid soggy veggies.

When you are ready to have it, give it a stir before serving and add a bit of fresh pepper or squeeze a lemon.
