Ingredients and Substitutes
Low-fat cottage cheese (1/2 cup) – You can also use full-fat cottage cheese for a richer taste.
Dijon mustard (½ tsp) – Swap for regular mustard or spicy brown mustard for a kick.
Onion powder (1/2 tsp) – You can also use fresh onion or onion flakes to add some texture to the recipe.
Garlic powder (1/2 tsp) – Just like onions, you can use fresh garlic or garlic flakes.
Salt and black pepper, to taste
Rotisserie chicken, chopped into small chunks (1 cup) – Rotisserie chicken helps you save time, but you can also use grilled chicken breasts.
Jarred banana peppers, drained and diced (1/4 cup) – If you like heat, replace with pickled jalapenos.
Celery stick diced (1) – You can replace it with carrots or cucumber for a different flavor and texture.
Red onion, diced (1/2) –Swap for white onion for a milder taste.
Green onion, thinly sliced (1)
How to Make Cottage Cheese Chicken Salad
Step 1.Grab your food processor and add the cottage cheese, Dijon mustard, onion powder, garlic powder, salt, and black pepper.
Step 2. Pulse until it becomes a smooth texture. But make sure you don’t over-blend.
Step 3. In a large bowl, add the rotisserie chicken.
Step 4. Add the banana peppers, celery, red onion, and green onion.
Step 5. Give everything a good mix.
Step 6. Add the blended cottage cheese.
Step 7. Mix thoroughly and season with salt and pepper to taste.
Step 8. Serve it immediately or store it in the fridge.

How I Store It
Place the salad in an airtight container and store it in the fridge for up to 3-4 days. Make sure you keep it at the top shelf to keep it fresh.
If you are adding other ingredients (like tomatoes and cucumbers), make sure you add them just before serving the salad to avoid soggy veggies.
When you are ready to have it, give it a stir before serving and add a bit of fresh pepper or squeeze a lemon.
