Enjoy the rich flavors of banana and peanut butter with tangy bursts of blueberry in this moist loaf. This recipe is grain-free, high-protein, dairy-free and gluten-free.
We all know that flour is the backbone of baking. Right?
I’ve learned that you don’t need flour to make delicious recipes, and this is another one of my creations that proves it.
This isn’t just any banana bread recipe. It takes it to another level by adding blueberries and peanut butter.
The result is a blueberry banana bread that is so delicious to eat, I know you won’t stop at just one slice.
Trust me… I’ve been there.

Banana bread is my favorite thing to turn to when I have a bunch of overripe bananas. They add sweetness without relying on extra sugar.

But the best thing about this recipe is that you only need six ingredients. It really can’t get easier!
My nephew absolutely loved it, and it’s free of gluten, dairy, and grains, which makes it very diet-friendly.

Ingredients and Substitutes
Bananas, mashed (3, ripe) – Swap with pumpkin puree, applesauce, or mashed sweet potatoes if you want a different flavor.
Crunchy peanut butter (1 cup) – Replace with smooth peanut butter or almond butter. And, if you want a nut-free option, use sunflower seed butter.
Vanilla extract (1 tsp) – Try almond extract, maple syrup, or a bit of cinnamon for a unique flavor.
Eggs (2)
Baking powder (1 tsp) – Use an equal amount of baking soda mixed with a small splash of vinegar or lemon juice.
Blueberries, fresh (1/2 cup) – You can also use other options like strawberries, raspberries, or dried cranberries.
Topping
Blueberries (A handful) – Replace with sliced almonds, walnuts, or a bit of granola.

How to Make Flourless Blueberry Banana Bread
Step 1. Preheat your oven to 350°F or 320°F if you’re using a fan-forced oven. Lightly grease a standard loaf pan with cooking oil or line it with parchment paper.
Grab a large bowl and add the bananas. Mash them.
Step 2. Add the peanut butter, vanilla extract, eggs, and baking powder.

Step 3.Stir the ingredients until everything is combined and you have a smooth batter.
Step 4. Add half of the blueberries.

Step 5.Fold in the blueberries.
Step 6. Pour the batter into the loaf pan and sprinkle the rest of the blueberries on top.

Step 7.Place it in the oven and bake for 50-55 minutes. If you see that the bread starts burning on top, cover it with tin foil to prevent it from burning.
To make sure it’s ready, test it with a toothpick. If it doesn’t come out clean, bake for another 5-10 minutes. When it’s ready, let it cool down inside the loaf pan before you take it out.

- Add Some Crunch: Mix in a handful of chopped walnuts, pecans, or almonds to add some delicious crunch.
- Make it Chocolatey: If you want to make it extra indulgent, fold in ½ cup of dark chocolate chips or cacao nibs.
- Spice it Up: Add ½ teaspoon of cinnamon or a pinch of nutmeg to the batter to create a warm, spiced flavor.
- Go Tropical: Replace the blueberries with ½ cup of finely chopped pineapple and add ¼ cup of shredded coconut.

My Tips & Tricks
- Use Very Ripe Bananas: The riper the bananas, the sweeter and more flavorful the bread is going to be.
- Don’t Overmix the Batter: Mix the ingredients just until they are combined. Overmixing can make the bread tough.
- Let it Cool Down: This is going to be crucial! Taking it too fast after baking can make the bread fall apart.
My Storage Tips
If you happen to have any leftovers, transfer them to an airtight container. You can keep them at room temperature for up to 3 days or place them in the fridge for up to 7 days.
One of the best things about this recipe is that you can place them in the freezer. Wrap them individually and keep them in the freezer for up to 3 months.
When you are ready to have them, thaw them or place them in the toaster to warm them up.

Ingredients

- 2 eggs

Instructions

- In a large bowl, combine mashed bananas, peanut butter, vanilla extract, eggs, and baking powder.
- Fold in blueberries.
- Pour the batter into the loaf pan and top up with a handful of blueberries.
- Bake in the center oven for 50-55 minutes. If the top starts cooking up faster, cover with tin foil to prevent burning. Test with a toothpick before serving; if the toothpick doesn’t come out clean, bake for another 5-10 minutes.
- Let it cool down inside the loaf pan before taking it out, slicing and serving.
