Moist banana bread mixed with juicy blueberries and protein-packed cottage cheese. This gluten-free, refined sugar-free of perfect for those healthy bakers.
One time, I was thinking about what I could do with some spotty bananas I had on my kitchen counter.
The good thing about bananas is that you can use them in anything.
Seriously, you can make muffins, cookies, and everyone’s favorite: banana bread.
But I was tired of having traditional banana bread. I wanted something different. Something more extravagant.
I saw a bowl of blueberries in the fridge, and an idea immediately popped into my head. How about making banana bread with blueberries?

This cottage cheese banana bread transforms a classic comfort food into a delicious, healthy treat.
Unlike traditional banana bread that relies on butter and white flour, here, we use cottage cheese to add moisture, protein, and a subtle tang. And, the addition of almond flour creates a tender crumb while keeping the bread naturally gluten-free.

Ingredients and Substitutes
Ripe bananas, mashed (2) – Replace with 1 cup of unsweetened applesauce or 1 cup of pumpkin puree for a more seasonal flavor.
Eggs (3 medium) – You can use flax eggs (1 tablespoon of ground flaxseed + 2.5 tbsp of water per egg).
Cottage cheese, blended (1/2 cup) – Swap with Greek yogurt or a vegan yogurt alternative for a similar creamy texture.
2 tbsp maple syrup – Use honey, agave syrup, or a sugar-free sweetener (like stevia or erythritol).
1 tsp vanilla extract – Try almond extract for another flavor.
2 1/2 cups almond flour – Replace with hazelnut flour, sunflower seed flour, or a gluten-free blend.
Baking soda (1 tsp)
Cardamom (1 tsp) – You can use cinnamon, nutmeg, allspice, or pumpkin spice.
Blueberries (1 cup + a few) – Raspberries, sliced strawberries, or sliced cherries are good alternatives.

Pin ItHow I Would Modify This Recipe
- High Protein Option: Add 1 scoop of vanilla protein powder (reduce the almond flour by ¼ cup). You can also add 2 tablespoons of chia seeds, or add chopped almonds or pecans.
- Make it Chocolatey: You can try adding other ingredients like chocolate chips or cacao nibs to make it extra rich and indulgent.
- Vegan Version: replace the eggs with flax eggs, use silken tofu instead of cottage cheese, and use agave nectar as your sweetener.
My Tips & Tricks
- Blend the Cottage Cheese: Use a food processor or high-speed blender to make sure that the cottage cheese is not lumpy. This can create a smooth and even texture.
- Choose the Best Bananas: Overripe bananas with brown spots are the best since they are the sweetest. If your bananas are not as ripe, roast them in a 400°F oven for 10 minutes.
- Prevent the Blueberries from Sinking: Toss the blueberries in a light coating of almond flour before you fold them in. This helps them stay suspended and prevents them from sinking.

My Storage Tips
For those leftovers, keep them in an airtight container at room temperature for 3-4 days or keep them in the fridge for up to 7 days.
For longer storage, wrap individual slices and place them in a freezer-safe container. You can keep it in the freezer for up to 3 months.
When you are ready to have it again, place it in the microwave for 30-45 seconds.
