Ingredients and Substitutes

Ripe bananas, mashed (2) – Replace with 1 cup of unsweetened applesauce or 1 cup of pumpkin puree for a more seasonal flavor.

Eggs (3 medium) – You can use flax eggs (1 tablespoon of ground flaxseed + 2.5 tbsp of water per egg).

Cottage cheese, blended (1/2 cup) – Swap with Greek yogurt or a vegan yogurt alternative for a similar creamy texture.

2 tbsp maple syrup – Use honey, agave syrup, or a sugar-free sweetener (like stevia or erythritol).

1 tsp vanilla extract – Try almond extract for another flavor.

2 1/2 cups almond flour – Replace with hazelnut flour, sunflower seed flour, or a gluten-free blend.

Baking soda (1 tsp)

How to Make Cottage Cheese Banana Bread with Blueberries

Step 1. Preheat your oven to 350°F and prepare a loaf of pine by lining it with parchment paper and greasing it.

Grab a large bowl and mix the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract.

Step 2. Grab a smaller bowl and add the almond flour, baking soda, and cardamom.

Step 3. Give the dry ingredients a good stir.

Step 4. Add the dry ingredients to the wet ingredients.

Step 9. Place in the oven and bake for 50 minutes. When you reach the 30-minute mark, cover with aluminum foil to prevent the top from getting burnt.
