Cottage Cheese Chicken Salad

- 1/2 cup low-fat cottage cheese
- 1/2 tsp Dijon mustard
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 cup rotisserie chicken chopped into small chunks
- 1/4 cup jarred banana peppers drained and diced
- 1 celery stick diced
- 1/2 red onion diced
- 1 green onion thinly sliced
Add cottage cheese, Dijon mustard, onion powder, garlic powder, salt and black pepper into a food processor. Pulse until smooth.
In a large mixing bowl, combine rotisserie chicken, banana peppers, celery, red onion, green onion and blended cottage cheese. Mix well and season with salt and black pepper.
Serve immediately or store in the fridge.
