Cottage Cheese Chicken Salad

Ingredients

  • 1/2 cup low-fat cottage cheese
  • 1/2 tsp Dijon mustard
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup rotisserie chicken chopped into small chunks
  • 1/4 cup jarred banana peppers drained and diced
  • 1 celery stick diced
  • 1/2 red onion diced
  • 1 green onion thinly sliced

Instructions

  • Add cottage cheese, Dijon mustard, onion powder, garlic powder, salt and black pepper into a food processor. Pulse until smooth.
  • In a large mixing bowl, combine rotisserie chicken, banana peppers, celery, red onion, green onion and blended cottage cheese. Mix well and season with salt and black pepper.
  • Serve immediately or store in the fridge.
