This chicken and sweet potato meal prep is sweet, refreshing, savory, and filling. This recipe is Whole30, Paleo, high protein, high calorie, gluten-free and dairy-free.

We all have a limited amount of time every week. When you think about everything that we have to fit into just 168 hours, it’s no wonder so many of us struggle to get through our to-do lists.

But one of the hardest things to prioritize is eating healthy meals. After all, isn’t eating takeout so much faster?

That’s where my chicken and sweet potato meal prep recipe comes in. This is the perfect dish to use when you have a busy week ahead, and you just need some nutritious, quick meals ready to go.

Packed with protein, nutrients, and healthy carbohydrates to keep you going, these meal prep bowls are the best. Not to mention, you only need a little bit of time to prepare all of them.

Ingredients and Substitutes

Sweet potatoes (4 large) – You can use butternut or pumpkin.

Olive oil (4 tbsp) – Any neutral oil will work.

Paprika (2 tsp)

Cinnamon (1 tsp)

Oregano (2 tsp) – White onions will also work.

Salt (1/4 tsp)

Black pepper (1/4 tsp)

Red Onion (2 onions)

Chicken breast (2 lbs) –Or use chicken thighs.

Olive oil (4 tbsp) – Once again, any neutral oil will work.

Paprika (1 tsp)

Cayenne pepper (1/4 tsp)– You can use chili powder.

Garlic powder (1 tbsp) – You can also use minced garlic.

Onion powder (1 tsp) – Minced onion can also work here.

Italian seasoning (2 tsp) – A collection of dried herbs is best here, even if you don’t have an Italian-specific blend.

Salt (1 tsp)

Black Pepper (1/2 tsp)

Tomatoes (4 medium) – Or cucumbers

Dill – Or parsley or cilantro.

Salt (a pinch) – I love sea salt the best.

How to Make Chicken and Sweet Potato Meal Prep

Step 1. In a bowl, mix the olive oil, paprika, cinnamon, oregano, salt, and black pepper together into a dark dressing. Peel and chop your sweet potatoes into even pieces so they’ll cook at the same time.

Step 2. Toss your sweet potatoes into the bowl and gently mix them around. Make sure you coat each piece evenly. Preheat your oven to 400F (200C) to get ready for roasting the vegetables.

Step 3. Grab a sheet pan and arrange your sweet potatoes and chopped onions.

Step 4. Drizzle with olive oil and pop into the oven for 30 minutes.

Step 5. Start with the oil as your base, then add paprika, cayenne pepper, garlic, onion powder, Italian seasoning, salt, and black pepper. Mix into a dressing.

Step 6. Toss your chopped chicken breast into the oil and thoroughly cover it with the spice mixture.

Step 7. Once you’ve mixed the chicken through the oil, you can let it sit in the mixture to let the flavor sink in.

Step 8. It’s time to fry! Heat your pan up to high heat so we can make the chicken as golden as possible. Drop the chicken in the pan.

Step 9. With the pan on high heat, cook your chicken for 12-15 minutes.

Step 10. Chop the tomato into medium-sized chunks. Chop the dill and add it to the tomatoes, along with a generous sprinkle of salt.

Step 11. Combine the fresh veggies.

Step 12. Finally, your last step is to assemble your meal prep boxes! Store them in the fridge for up to 3-4 days, sealed. Reheat before eating.

How Long Will This Meal Prep Last?

It will last for 3-4 days, sealed in glass food containers.

How to Store This Meal Prep?

I would store these in glass food containers instead of plastic ones, but the plastic ones will do just fine. The food tends to last longer in the glass, though.

What Else Pairs Well With Sweet Potato?

Aside from deliciously spiced chicken breast, sweet potatoes pair beautifully with pork, salmon, halibut, and even other vegetables like green beans or kale.

Chicken and Sweet Potato Meal Prep

Ingredients 

Sweet Potatoes

  • 4 large sweet potatoes diced
  • 4 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp cinnamon
  • 2 tsp oregano
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 red onions roughly chopped
  • 1 tbsp olive oil

Chicken

  • 2 lbs chicken breast cut into small pieces
  • 4 tbsp olive oil
  • 1 tsp paprika
  • ¼ tsp cayenne pepper
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper

Fresh Veggies

  • 4 medium tomatoes
  • Dill
  • Pinch of salt

Instructions 

Sweet Potatoes

  • Preheat the oven to 400F. Take out a large bowl and add olive oil, paprika, cinnamon, oregano, salt, and black pepper. Mix all of the ingredients together.
  • Add in the diced sweet potatoes and cover them with oil thoroughly.
  • Arrange sweet potatoes on a sheet pan, leaving some space in the corner.
  • Add chopped red onions into the corner and drizzle with olive oil.
  • Bake in the oven for 30 minutes

Chicken

  • Take out a large bowl and add olive oil, paprika, cayenne pepper, garlic, onion powder, Italian seasoning, salt and black pepper. Mix all of the ingredients together.
  • Add in the chicken and thoroughly cover with a spice mixture.
  • Heat up your frying pan to high heat, and add in all of the chicken with the oil.
  • Cook for 12-15 minutes until browned and fully cooked.

Fresh Veggies

  • Chop tomatoes, add in the dill and salt. Combine the ingredients.

Assembly

  • Take out 4 food containers. Add in the cooked sweet potatoes, then cooked red onion, chicken, and fresh veggies.
  • Heat up before serving! You can also store the fresh veggies separately and add them in after heating. Enjoy!
