You know that I love experimenting.
I enjoy taking an ordinary recipe and making it extra special. And, I know I’ve accomplished something when my boyfriend starts showing up in the kitchen asking me when it’s going to be ready.
This was the case with this strawberry cottage cheese banana bread.
I had overripe bananas, strawberries, and cottage cheese. I started mixing ingredients, and the results were incredible.

So, what makes this recipe so special?
The combination of almond flour and oat flour creates a tender crumb that just melts in your mouth. And, the cottage cheese makes sure everything stays moist (I hate dry bread).

Ingredients and Substitutes
WET INGREDIENTS
Eggs (2) – You can use unsweetened applesauce (1/2 cup) or use flaxseed eggs (2 tbsp of flaxseed meal combined with 6 tbsp of water).
Ripe bananas, mashed (2) – Replace with pumpkin puree (1 cup) or unsweetened apple sauce.
Cottage cheese (2/3 cup) – Swap with Greek yogurt, ricotta cheese, or silken tofu.
Vanilla extract (1 tsp) – Almond extract can be a great alternative.
DRY INGREDIENTS
Oat flour (3/4 cup) – You can also use all-purpose flour (not gluten-free), whole wheat flour, or a gluten-free flour blend.
Almond flour (1 cup) – Swap with coconut flour. However, if you use coconut flour, you might need to add a bit more liquid to avoid dry bread.
Brown sugar (1/4 cup) – Replace with coconut sugar, maple syrup, or a natural sweetener like honey or agave syrup.
Baking powder (1 ½ tsp)
Salt (1/4 tsp)
MIX-INS
Strawberries, diced (1 cup) – I’ve also used blackberries, blueberries, raspberries, or small chunks of peaches.
Strawberries, sliced (2 tbsp) – You can use any other fruit for garnish, like kiwi, mango, or any of the previous fruits.

How to Make Strawberry Cottage Cheese Banana Bread
Step 1.Preheat your oven to 350°F and prepare a loaf pan by lining it with parchment paper and greasing the sides.
Grab a large bowl and add the eggs, bananas, cottage cheese, and vanilla extract.
Step 2. Give the ingredients a good stir until they are all combined.

Step 3. Grab a smaller bowl, and add the oat flour, almond flour, brown sugar, baking powder, and salt.
Step 4. Give the ingredients a good stir.

Step 5. Slowly start adding the dry ingredients to the wet ones. Mix until it creates a thick batter.
Step 6. Add the diced strawberries.

Step 7. Fold in the strawberries.
Step 8. Transfer the batter to the loaf and sprinkle with the sliced strawberries on top. Place it in the oven and bake for 40-45 minutes.

Step 9. When it’s cooked through, remove it from the oven and let it cool down inside the loaf pan. When you are ready to serve, slice it up and enjoy.

- Add Nuts: Try adding some extra texture by adding ½ cup of chopped walnuts, pecans, or cacao nibs.

My Tips & Tricks
- Use Very Ripe Bananas: The more spots it has, the better! Overripe bananas are sweeter and more flavorful, which makes them great when baking banana bread.
- Let it Cool Completely: I know it’s tempting to slice into it right away. But, let it cool down to allow it to set. This helps you get cleaner slices and a better texture.
- Blend the Cottage Cheese: If you are worried about the texture of the curds, you can blend the cottage cheese until it’s smooth.
My Storage Tips
If you want to keep your banana bread fresh, store it in an airtight container at room temperature for 3 days. If you want to keep it for longer, keep it in the fridge for up to 7 days.
Now, if you want to keep it for longer, slice it up and freeze individual slices. You can keep it in the freezer for up to 3 months.

- 2/3 cup cottage cheese
- 1 tsp vanilla extract
Dry Ingredients
- 3/4 cup oat flour
- 1 cup almond flour
- 1/4 cup brown sugar
- 1 ½ tsp baking powder
- 1/4 tsp salt

- 2 tbsp strawberries sliced
Instructions
- Preheat the oven to 350F. Prepare a loaf pan by lining it with parchment paper.
