Dry Ingredients
- 3/4 cup oat flour
- 1 cup almond flour
- 1/4 cup brown sugar
- 1 ½ tsp baking powder
- 1/4 tsp salt

- 1 cup strawberries diced
- 2 tbsp strawberries sliced
Preheat the oven to 350F. Prepare a loaf pan by lining it with parchment paper.
In a large bowl, whisk together eggs, bananas, cottage cheese, and vanilla extract.
In a smaller bowl, combine oat flour, almond flour, brown sugar, baking powder, and salt.
Slowly add the dry ingredients to the wet ones and mix to combine.
Finally, fold in diced strawberries, leaving a few sliced ones to top up the cake.
Pour the batter into the prepared loaf pan, level it out, and top it with strawberry slices.
Bake in the oven for 40-45 minutes until it’s fully cooked, let it cool down inside the loaf pan and serve sliced.
