  • 3/4 cup oat flour
  • 1 cup almond flour
  • 1/4 cup brown sugar
  • 1 ½ tsp baking powder
  • 1/4 tsp salt

  • 1 cup strawberries diced
  • 2 tbsp strawberries sliced

Instructions

  • Preheat the oven to 350F. Prepare a loaf pan by lining it with parchment paper.
  • In a large bowl, whisk together eggs, bananas, cottage cheese, and vanilla extract.
  • In a smaller bowl, combine oat flour, almond flour, brown sugar, baking powder, and salt.
  • Slowly add the dry ingredients to the wet ones and mix to combine.
  • Finally, fold in diced strawberries, leaving a few sliced ones to top up the cake.
  • Pour the batter into the prepared loaf pan, level it out, and top it with strawberry slices.
  • Bake in the oven for 40-45 minutes until it’s fully cooked, let it cool down inside the loaf pan and serve sliced.
