Ingredients and Substitutes

Lean ground beef (1 lb) – This provides a hearty base for the soup. But if you prefer a vegetarian option, try using tofu or plant-based meat. You can also do turkey or chicken ground (or a combination of different types of meats).

Yellow onion, finely chopped (1 medium) – For a slightly sweeter taste, you can use red onions or shallots.

Garlic, minced (2 cloves) – My favorite lazy hack is to keep a jar of minced garlic in olive oil in the fridge.

Not only does it save me time, but it prevents me from smelling like garlic all day. If you don’t have raw garlic, you can also use garlic flakes.

Cauliflower florets, cut into pieces (4 cups) – If you want to add some flavor, consider using broccoli florets or chopped zucchini.

Carrot, diced (1 small) – This adds some sweetness and a splash of color to your meal. But if you don’t have any, you can also use bell peppers or radishes.

Celery stalk, sliced (1) – For those who don’t like celery, you can try using bok choy or fennel for a different crunch and taste.

Chopped tomatoes (14 oz can) – If you prefer something less acidic you can use diced bell peppers or have tomato puree.

Beef broth (6 cups) – While I recommend using beef broth (if you are using beef), you can also use vegetarian broth or fish broth. It depends on the main meat you are using.

Yellow string beans (1 cup) – As an alternative, you can try using snap peas, green beans or sliced asparagus.

Italian seasoning (1 tsp) – Don’t skip this ingredient since it adds a punch of flavor.

Salt and black pepper, to taste

How to Make Low Carb Hamburger Soup

Step 1. Grab a large pot and place it over medium-high heat. Add the beef mince, chopped onion, and garlic.

Step 2. Break the beef apart with a spatula and cook it until it browns, it should take roughly 7-10 minutes.

Step 3. Add the remaining ingredients to the pot.

Step 4. Bring the pot to a boil.

Step 5. Reduce the heat and let the soup simmer for another 15 minutes or until you find that the vegetables are tender.

Step 6. Once it’s ready to serve, sprinkle some chopped parsley on top.

Now, I enjoy this hearty soup on its own. But, there are some great sides that can complement and elevate this delicious meal. Here are some of my favorite options.

  • Fresh green salad: Serve the soup with a crisp and refreshing salad topped with a light vinaigrette.
  • Keto garlic bread: This is an excellent option to soak up the delicious broth.
  • Roasted vegetables: Add some extra vegetables like roasted Brussels sprouts, mushrooms, or zucchini.

Storage and Leftovers

First, allow the soup to cool completely before placing it into an airtight container. You can keep this in the fridge for up to 4-5 days.

If you want to keep it for longer, you can place it in the freezer. I do recommend you store it in individual portions to avoid any waste.

Once you are ready to have it, place the soup in a pot over medium heat until it’s warmed through. While you can also reheat it in the microwave, I like how it turns up using the stove instead.

Ingredients 

  • 1 lb lean ground beef
  • 1 medium yellow onion finely chopped
  • 2 cloves garlic minced
  • 4 cups cauliflower florets cut into pieces
  • 1 small carrot diced
  • 1 celery stalk sliced
  • 14 oz can chopped tomatoes
  • 6 cups beef broth
  • 1 cup yellow string beans
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

For Serving:

  • Parsley chopped

Instructions 

  • Place a large pot or Dutch oven over medium-high heat. Add in the beef mince, chopped onion, and garlic. Break the beef apart and cook until brown for around 7-10 minutes.
  • Add the rest of the ingredients into the pot, stir it, and bring to a boil. Now, reduce the heat and let the soup simmer for around 15 minutes until the vegetables are tender.
