This custard-style apple cake features greek yogurt and sweet cinnamon apples. It is naturally gluten-free, high in protein, low calorie, and perfect for an afternoon treat.

This flourless Greek yogurt apple cake uses only 10 ingredients to create a delicious explosion of flavor.

But the ingredients are not the only incredible thing about it. The cooking process is so easy to make.

Unlike dense cheesecakes that require for you to do water baths and hours of cooling, or dry sponge cakes that rely heavily on butter (affecting your health goals).

This cake uses eggs and yogurt to make a creamy and healthy treat.

Ingredients and Substitutes

Thick Greek Yogurt (2 cups) – You can use plain full-fat yogurt or a plant-based option like coconut yogurt or silken tofu.

Eggs (5)

Cornstarch (½ cup) – Use arrowroot powder, potato starch, or tapioca starch.

Powdered sugar (½ cup) – Swap with coconut sugar processed into a fine powder or a sugar-free confectioner’s blend.

Vanilla extract (1 tsp) – Replace with vanilla paste, vanilla powder, or almond extract if you want a different flavor.

Pinch of salt

Apple, cored, peeled and thinly sliced (1 medium) – I’ve also tried using pears, peaches, or a mix of seasonal fruits.

Cinnamon (1 tsp) – You can also use pumpkin pie spice, nutmeg, or cardamom.

Powdered sugar (1 tsp)

GARNISH

Walnuts, finely chopped (¼ cup) – Pecans, almonds, or sunflower seeds are great alternatives.

How to Make Flourless Greek Yogurt Apple Cake

Step 1. Preheat your oven to 350°F and prepare an 8-inch cake pan by lining it with parchment paper. Grab a large bowl and add the eggs and Greek yogurt.

Step 2. Give the ingredients a good stir.

Step 3. Add the cornstarch, powdered sugar (just leave out a bit for the apples), vanilla extract, and salt.

Step 4. Give the ingredients another stir.

Step 5. Grab a small bowl and add some of the powdered sugar and cinnamon. Give it a mix to combine both ingredients.

Step 6. Add the sliced apples and cover them with the sugar-cinnamon mix.

How I Would Modify This Recipe

  • Make it Citrusy. Add the zest of one lemon or orange to the batter. This can add a nice citrusy taste.
  • Spice it Up. You can try experimenting with other spices like cardamom or nutmeg to add a warm hint to the cake.
  • Add Dried Fruit. Fold in a handful of raisins, dried cranberries, or chopped dates. You might need to soak them up a bit in warm water to pump them up.

My Tips & Tricks

  1. Use Room Temperature Ingredients. Cold eggs and cold yogurt might not combine properly, which can lead to a lumpy batter. Take your dairy and eggs out of the fridge for at least 30 minutes before you make the cake.
  2. Thin Apple Slices. Slice your apples as thinly as possible. Thick slices are heavy and might sink to the bottom of the batter, or they might not cook through completely.
  3. Check for Doneness. Remember that every oven is different. The cake is ready when the center is set but still has a slight wobble (like a cheesecake). Use a toothpick to check if it’s ready.

My Storage Tips

Place any leftovers in an airtight container and keep them in the fridge for up to 4-5 days. While you can put it in the freezer, I’ve tried it, and it changes the texture a bit. So I don’t entirely recommend it.

Ingredients 

  • 2 cups thick Greek Yogurt
  • 5 eggs
  • ½ cup cornstarch
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 medium apple cored, peeled and thinly sliced
  • 1 tsp cinnamon
  • 1 tsp powdered sugar

Garnish

  • ¼ cup walnuts finely chopped

Instructions 

  • Preheat the oven to 350F. Line an 8-inch cake pan with parchment paper.
  • In a large bowl, whisk together Greek yogurt and eggs, add in cornstarch, powdered sugar, vanilla extract, and a pinch of salt, and whisk some more.
  • In a bowl, cover sliced apples with cinnamon and powdered sugar.
  • Pour the batter into the cake form and cover with apples.
  • Bake in the oven for 60 minutes, then let it cool for another 2 hours before serving. Optionally, sprinkle with walnuts.
