My flourless cakes have been going viral all over Facebook and Pinterest, so I knew I needed keep on going with these recipes. I came up with this delicious flourless chocolate cake that packs cottage cheese.

The bottom layer provides a dense, fudgy chocolate satisfaction, while the cottage cheese layer adds creamy, and almost a cheesecake-style element.

Ingredients and Substitutes
Bananas, mashed (3 ripe) – You can replace them with 1 cup of unsweetened applesauce or 1 cup of canned pumpkin puree.
Drippy peanut butter (1 cup) – Almond butter or sunflower seed butter are great alternatives; the latter is a great option if you have a nut allergy.
Baking powder (1 tsp)
Eggs (2) – For a vegan option, replace each egg with a flax egg (1 tbsp of flaxseed meal mixed with 2.5 tbsp of water).
Cocoa powder, unsweetened (2 tbsp) – You can also use Dutch-processed cocoa powder, but it may change the flavor slightly.
COTTAGE CHEESE LAYER
Cottage cheese, low-fat, smooth (1/2 cup) – If you don’t have cottage cheese, you can use ricotta or blended Greek yogurt.
Egg (1)
Maple syrup (1 tbsp) – Feel free to swap it with honey, agave, or a sugar-free syrup.
Cornstarch (2 tbsp) – Potato starch or arrowroot are great alternatives.
TOPPING
Almond flakes – You can use crushed pecans, walnuts, or even shredded coconut.

How to Make Flourless Chocolate Cake with Cottage Cheese
Step 1. Preheat your oven to 350°F and prepare a loaf pan by spraying it with oil or lining it with parchment paper. Grab a large bowl, and add the mashed bananas, peanut butter, baking powder, and eggs.
Step 2. Stir all the ingredients.

Step 3. Add the cocoa powder.
Step 4. Give it a good stir.

Step 5. Pour half of the batter into the loaf pan.
Step 6. Grab a smaller bowl, and add the cottage cheese, egg, maple syrup, and cornstarch.

Step 7. Mix all the ingredients until you get a smooth mix.
Step 8. Add the cottage cheese mix to the loaf pan. Grab a spatula and level it out to form a thin layer.

Step 9. Pour the rest of the cocoa mix on top and use a clean spatula to level it out.
Step 10. Sprinkle the almond flakes on top. Place it in the oven and bake it for 50 minutes.
Once it hits the 20-minute mark, cover it with foil so the top of the bread doesn’t burn. When it’s ready, let it cool down before you slice it.

My Tips & Tricks
- Use Room Temperature Ingredients: Room temperature ingredients mix more easily. Try to take your eggs out of the fridge 30 minutes before.
- Smooth Texture: If you want the cottage cheese layer to be extra silky, try blending the cottage cheese before adding it into the bowl.
- Don’t Rush the Layering: You want to add the layers slowly to prevent them from mixing too much. Now, while you want some marbling, you don’t want them to completely mix.

Store any leftovers in the fridge and keep them there for up to 5 days.
If you want to keep them for longer, wrap individual portion sizes and place them in a freezer-friendly bag. Keep them in the freezer for up to 3 months.

Instructions
- Preheat the oven to 350F. Spray a loaf pan with oil.
- In a large bowl, mix mashed bananas, peanut butter, baking powder, and eggs together. Combine them well.
- Add in cocoa powder and combine well.
- Now use half of the batter and pour it into the loaf pan.
- Now, in a smaller bowl, combine cottage cheese, egg, maple syrup, and cornstarch until it’s smooth.
- Add cottage cheese to the loaf pan and spread it around so it forms a thin layer.
- Cover with the rest of the cocoa batter and level it out. Sprinkle with almond flakes on top.
- Bake in the oven for 50 minutes. After 20 minutes of baking, cover with foil so the top of the bread doesn’t burn.
- Let it cool down inside the loaf pan before slicing!
