- 2 cups thick Greek Yogurt
- 5 eggs
- ½ cup cornstarch
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 medium apple cored, peeled and thinly sliced
- 1 tsp cinnamon
- 1 tsp powdered sugar
Garnish
- ¼ cup walnuts finely chopped
Preheat the oven to 350F. Line an 8-inch cake pan with parchment paper.
In a large bowl, whisk together Greek yogurt and eggs, add in cornstarch, powdered sugar, vanilla extract, and a pinch of salt, and whisk some more.
In a bowl, cover sliced apples with cinnamon and powdered sugar.
Pour the batter into the cake form and cover with apples.
Bake in the oven for 60 minutes, then let it cool for another 2 hours before serving. Optionally, sprinkle with walnuts.
