Ingredients and Substitutes

2 lbs chicken breasts – While I prefer to use chicken breasts, you can also use ground beef or a plant-based option for a vegetarian or vegan meal.

5 medium sweet potatoes – For a low-carb option, try substituting the sweet potatoes with cauliflower florets. This can significantly reduce the carb content while maintaining the hearty nature of the dish.

2 broccoli heads – You can use a combination of broccoli and cauliflower florets.

Buffalo sauce (1 cup) – Adjust the spice level by adding or reducing the Buffalo sauce.

Olive oil (1/2 cup)

Garlic powder (2 tsp) – You can also use garlic flakes.

Onion powder (2 tsp) – Just like garlic, you can use onion flakes.

Salt (1/2 tsp)

Black pepper (1 tsp)

Cheddar, shredded (1 cup) – If you want to modify the flavor you can use different varieties of cheeses. I’ve tried pepper Jack, Colby Jack, and mozzarella cheese. All of them are great options.

How to Make Buffalo Chicken Sweet Potato Casserole

Step 1. Preheat the oven to 425F. Grab a 9×13 casserole dish with the olive oil. Properly preheating the oven ensures even cooking, so make sure you follow this step.

To prepare the sauce, grab a small bowl and combine the buffalo sauce, olive oil, garlic powder, onion powder, salt, and black pepper.

Step 2. Mix everything thoroughly. Make sure there are no clumps since it can change the flavor of the meal.

Step 3. In a large bowl, place the sweet potatoes.

Step 4. Grab half the buffalo sauce mixture and combine it with the sweet potatoes.

Step 5. Mix everything until the sweet potatoes are evenly coated. This will ensure that every sweet potato absorbs all the delicious flavors from the sauce. Place the sweet potatoes onto the baking dish.

Step 6. Roast the sweet potatoes in the oven for 30 minutes. Make sure you flip the potatoes halfway through to ensure they are evenly cooked.

Step 11. Grab the cheese and sprinkle it on top of the casserole. Put it back into the oven in a broil, and cook for 3-5 minutes.

Step 12. Once it’s ready to eat, garnish with chopped green onions before serving. Not only will it make the meal look pretty, but it adds some freshness to the dish.

  • 2 lbs chicken breasts boneless and skinless, cut into cubes
  • 5 medium sweet potatoes cut into small cubes
  • 2 broccoli heads cut into small florets
  • 1 cup buffalo sauce
  • 1/2 cup olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar shredded

Garnish

  • Green onion chopped

Instructions 

  • Preheat the oven 425F and spray a 9×13 casserole dish with oil.
  • In a small bowl, combine buffalo sauce, olive oil, garlic powder, onion powder, salt, and black pepper.
  • In a large bowl, combine sweet potatoes with half of the buffalo sauce mixture until all of the sweet potato is covered.
  • Add the sweet potato to the baking dish and roast in the oven for 30 minutes, flipping the potatoes halfway. It’s important to make sure the potatoes cook through.
  • Add the chicken and broccoli to the same large bowl, add the rest of the buffalo sauce, and combine well to coat the ingredients.
  • After 30 minutes have passed, add broccoli and chicken on top of sweet potatoes. Bake for another 20-25 minutes until the chicken has fully cooked.
  • Finally, sprinkle the casserole dish with cheddar cheese. Broil for 3-5 minutes until the cheese has melted.
  • Garnish with green onion.
