CHICKEN
Chicken thighs, boneless and skinless (1.5 lb) – You can replace it with chicken breasts, turkey fillets, or tofu for a plant-based option.
Olive oil (2 tbsp) – Swap with avocado oil, ghee, or coconut oil.
Dried oregano (1 tsp) – Substitute with Italian seasoning, thyme, or marjoram.

How to Make Lemon Chicken Orzo
Step 1. Coat the chicken with 1 tbsp of olive oil, oregano, paprika, salt, and pepper.
Step 2. Grab a skillet and place it over medium-high heat. Add the rest of the oil and let it heat up.
Place the chicken and cook the thighs for 3-5 minutes on each side, until golden and cooked through. Remove from the skillet and set it aside.

Step 3. Lower the heat to medium and add 2 tbsp of olive oil. Then add the garlic, onion, and Italian seasoning.
Cook for 2-3 minutes.
Step 4. Add the orzo and toast it for 2-3 minutes.

Step 5. Pour the wine and let it simmer for 2-3 minutes.
Step 6. Then, pour the chicken stock and bring to a boil. Let it simmer for 5-10 minutes, stirring occasionally.

Step 7. Add the spinach and cook until it wilts.
Step 8. Add the cream, Parmesan, and lemon juice. Season with salt and pepper to taste.

Step 9. Place the chicken back into the skillet and let it warm through.

My Storage Tips
It’s difficult to have any leftovers, but if you do, place them in an airtight container. You can keep them in the fridge for up to 3-4 days. The orzo might absorb some of the liquid from the sauce, so it might thicken just a bit.
You can also place it in the freezer, but keep in mind that since it’s a cream-based sauce, it might slightly separate when you thaw it.
When you are ready to have it again, place it over the stove at low heat and cook for 5-7 minutes or until it’s all warmed through. If it’s too thick, try adding a splash of chicken broth.
