Lemon Chicken Orzo

Chicken
- 1.5 lb chicken thighs boneless and skinless
- 2 tbsp olive oil divided
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Lemon Orzo
- 2 tbsp olive oil
- 4 cloves garlic minced
- 1 medium yellow onion chopped
- 1 1/2 tsp Italian seasoning
- 1 cup orzo
- 1/2 cup dry white wine
- 2 cups chicken stock
- 4 oz baby spinach
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese grated
- 3 tbsp lemon juice
- Sea salt to taste
- Black pepper to taste
Toss chicken with 1 tbsp olive oil, oregano, paprika, salt, and pepper.
Heat the remaining oil in a skillet over medium-high heat. Cook chicken for 3–5 minutes per side until golden and cooked through. Remove and set aside.
Reduce the heat to medium. Add 2 tbsp olive oil, garlic, onion, and Italian seasoning. Cook for 2–3 minutes.
Add orzo and toast for 2–3 minutes.
Pour in wine and simmer for 1–2 minutes.
Add chicken stock, bring to a boil, then simmer for 5–10 minutes, stirring occasionally.
Stir in spinach and cook until wilted.
Add cream, Parmesan, and lemon juice. Season to taste.
Return chicken to the skillet and warm through.
Serve immediately.
