Why Make Keto Chocolate Chip Cookies?

Chocolate chip cookies are a classic cookie. What’s not to love about yummy crispy cookies filled with delicious chocolate chips?

Everything but the carbs, that is! One chocolate chip cookie could easily net you 8 grams of net carbs. And who stops at just one cookie?

However, these ketogenic chocolate chip cookies have only 2 grams of net carbs. And since they contain only 74 calories, you can eat more than one cookie-without blowing your ketosis or your diet!

These cookies are nice and crunchy and filled with chocolate chip goodness. So, they’re perfect for dunking in a nice cup of tea or coffee.

What Ingredients to Use

 

To keep them keto, you’ll be using chocolate sugar-free chocolate chips. Sugar-free chocolate chips contain way less net carbs than regular chocolate chips.

For example, a 14-gram package of sugar-free chocolate chips contains only 5 grams of net carbs. That’s about half the net carbs in regular chocolate chips.

I recommend using dark chocolate chips like Lily’s All Natural Dark Chocolate Chips. Dark chocolate chips have a ton of antioxidants, and the bitterness counterbalances the sweetness of the cookies.

Omega-3s are good for your mind and heart.

You’ll also notice that I use a bit of salt to make these cookies. Don’t skip the salt as the salt improves the texture of the cookies and boosts the flavor.

All without making a big dent in the sodium content. These cookies contain only 66mg of sodium- well within the recommended daily intake of less than 2300mg of sodium.

And don’t skip the vanilla extract either. The vanilla extract makes your cookies not taste flat.

Meanwhile, the baking soda helps your cookies rise, and the almond milk helps bind your ingredients together.

And to keep these cookies keto, you’ll be using almond flour and erythritol, which I’ll discuss later.

Chocolate Chip Cookies are so Quick to Make

Making these cookies takes less than 20 minutes. So, if you have a craving, you can quickly satisfy it.

And to make them, all you need to do is mix your dry ingredients together. Melt your butter and add the rest of your wet ingredients.

Then, mix your wet and dry ingredients together. Shape your dough into cookies and bake for 10 minutes.

What Sweetener to Use for Cookies?

To sweeten these cookies, you’ll be using erythritol.  Erythritol is one of the best sweeteners on the market right now. Here is the one I use.

It tastes like sugar, but without the calories. Though one teaspoon contains 4 grams of net carbs, most of it is excreted by your body, so virtually no net carbs are absorbed by your body.

As well, erythritol doesn’t spike your blood sugars. Besides being good for a ketogenic diet, erythritol has some health benefits.

It appears to have an antioxidant effect.

Erythritol appears to be quite safe, but you don’t want to overdo it. If you eat too much in one go, you can have stomach issues, so moderation is key.

Since erythritol is about 70% as sweet as sugar, you want to use more erythritol in recipes that call for sugar.

Almond Flour – The Key to Keeping Cookies Ketogenic

Besides using a sweetener, another key to keeping cookies ketogenic is the type of flour you use. Regular cookies use regular flour.

However, regular flour contains a lot of carbs. A 30 gram serving of regular flour contains 22 grams of net carbs, which is probably more than your net carb limit for the entire day!

It also does not contain a lot of fiber, protein or fat. So, after eating cookies made with regular flour, you don’t feel full.

Also, during the processing of regular flour, many B vitamins are lost. So, if you use unfortified regular flour, you are missing valuable B vitamins.

My Ketogenic Chocolate Chip Cookies are made of almond flour, which is a great alternative for keto baking.

Compared to regular flour, 30 grams of almond flour contains only 4 grams of net carbs. It’s also quite high in fat in fat and has a decent amount of protein, so it will keep you full longer.

Almond flour is also packed with nutrients. It’s a great source of manganese and vitamin E and contains decent amounts of other nutrients.

And using almond flour to bake is pretty easy. To do so, replace the regular flour in your recipes by the same amount of almond flour.

Coconut Flour – A Great Low Carb Alternative

Coconut flour is also a great alternative for keto baking.

A 30 gram serving of coconut flour contains only 7.5 grams of net carbs. And since coconut flour is super absorbent, you don’t need to use a lot of it, so your net carbs are even lower.

Coconut flour is also high in fat, protein, and fiber. So, it keeps you full longer.

What’s more, coconut flour contains medium-chain triglycerides (MCTs). These are fats that can turbocharge your ketosis and may even be good for your heart.

Because coconut flour is very absorbent, when substituting coconut flour for regular flour, you only want to use ¼ the amount.

Or you can use the same amount of coconut flour as you would regular flour, but then increase the quantity of your wet ingredients accordingly.

Ingredients
  

  • 1 cup almond flour
  • 3 tbsp sugar-free chocolate chips
  • 2 tbsp granulated erythritol
  • 2 tbsp butter
  • 2 tsp almond milk
  • 1/4 tsp salt
  • 1/8 tsp baking soda
  • 1 tsp pure vanilla extract

Instructions
 

  • Mix almond flour, erythritol, baking soda, salt, and chocolate chips.
  • Melt the butter, add milk and vanilla extract to it. Mix it well.
  • Now mix both dry and wet ingredients. Shape the dough into cookies and bake at 375F (190 C degrees) for 10 minutes. If you’re using the fan: 340 F (170 C degrees).
  • Let them cool down before serving.
