Every couple of weeks, we gather to bond over a delicious recipe that inspires us. It was my turn to find a new recipe to try.

But, I only have apples, Greek yogurt, and oatmeal.

The result was this flourless oatmeal apple cake that fills your kitchen with the scent of cinnamon and baked apples.

It’s a guilt-free dessert that can create warm and cozy memories with those you love the most. Perfect when you need a pick-me-up in the morning, a healthy snack, or a light dessert after dinner.

Nutritious Flourless Oatmeal Apple Cake

Ingredients and Substitutes

Rolled oats, divided (1 cup) – You can replace rolled oats with quick oats if you want a finer texture. You can also use almond flour if you prefer a lower-carb and gluten-free option.

Chia seeds (1 tbsp) – Replace with flaxseeds.

Apple, peeled and chopped (1 large) – Swap with pears or grated zucchini for a less sweet option.

Maple syrup (3 tbsp) – Substitute with honey, agave syrup, or brown rice syrup. You can also use a sugar-free option if you want to reduce the carb content.

Vanilla extract (1 tsp) – If you want to try different flavors, you can use almond extract or maple extract.

Cinnamon (1 tsp) – Swap with pumpkin pie spice or nutmeg.

Baking soda (½ tsp)

Baking powder (½ tsp)

Greek yogurt (3 tbsp) – You can use regular yogurt, dairy-free yogurt, or unsweetened applesauce.

Eggs (2 medium)

Butter or coconut oil (1 tbsp) – Replace with ghee, avocado oil, or coconut oil.

How to Make Flourless Oatmeal Apple Cake

Step 1. Preheat your oven to 350°F and prepare a 9×5” loaf pan by lining it with parchment paper. Place ¾ cup rolled oats and the apples in the food processor.

Step 2. Add the rest of the ingredients.

Step 3. Process until it’s a smooth batter.

Step 4. Add the rest of the ¼ cup of rolled oats.

Step 5. Fold in the oatmeal with a spatula.

Step 6. Pour the batter into the loaf pan.

Step 7. Place in the oven and bake for 35-40 minutes.

Step 8. Remove it from the oven and let it cool off (it normally takes around one hour). Once it cools down, you can slice it into 8-10 rectangles.

How I Would Modify This Recipe

  • Add Nuts: To add some crunch, mix in ¼ cup of chopped walnuts or pecans along with the final portion of the oats.
  • Include Dried Fruit. Add a handful of raisins, cranberries, or chopped dates to add a bit more sweetness.
  • Spice it Up. You can add a pinch of nutmeg, allspice, or cardamom to have a warmer flavor.

My Tips & Tricks

  1. Use the Right Apples. For a great texture and flavor, use a firm apple variety like Honeycrisp, Granny Smith, or Gala.
  2. Let it Cool Completely. I know it can be tempting to have a slice when it’s fresh from the oven. However, a warm cake can be quite delicate. If you slice it when it’s hot, it might crumble.
  3. Don’t Overmix. Once you add the final ¼ cup of oats, just stir the oats until they are combined.

My Storage Tips

If you have any leftovers, place them in an airtight container. You can keep them at room temperature for 2-3 days or in the fridge for up to 7 days.

You can also place individually wrapped slices in a freezer-safe container and keep them in the freezer for up to 3 months.

Ingredients 

  • 1 cup rolled oats divided
  • 1 tbsp chia seeds
  • 1 large apple peeled and chopped
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 3 tbsp Greek yogurt
  • 2 medium eggs
  • 1 tbsp butter or coconut oil

Instructions 

  • Preheat the oven to 350F. Line a 9’’x5’’ loaf pan with parchment paper.
  • Put in ¾ cup rolled oats and the rest of the ingredients into a food processor.
  • Process until smooth, and then mix in the remaining ¼ cup of oats.
  • Pour the batter into the loaf pan and bake in the oven for 35-40 minutes.
  • Remove from the oven and let the cake cool off. Let the cake cool down for about an hour.
  • Once the cake cools down, slice it into 8-10 rectangular slices.
