- 1 cup rolled oats divided
- 1 tbsp chia seeds
- 1 large apple peeled and chopped
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking soda
- ½ tsp baking powder
- 3 tbsp Greek yogurt
- 2 medium eggs
- 1 tbsp butter or coconut oil
Preheat the oven to 350F. Line a 9’’x5’’ loaf pan with parchment paper.
Put in ¾ cup rolled oats and the rest of the ingredients into a food processor.
Process until smooth, and then mix in the remaining ¼ cup of oats.
Pour the batter into the loaf pan and bake in the oven for 35-40 minutes.
Remove from the oven and let the cake cool off. Let the cake cool down for about an hour.
Once the cake cools down, slice it into 8-10 rectangular slices.
