Ingredients and Substitutes
Chicken breasts, skinless and boneless (2 lbs) – If you don’t have chicken breasts, you can use chicken thighs.
Italian seasoning (2 tbsp) – Make sure you don’t skip this ingredient. So, if you don’t have any at home, mix oregano, basil, and thyme for a homemade version.
Pesto (1 cup) – You can use homemade or store-bought pesto. You can also use basil pesto or arugula pesto. Make sure it’s gluten-free if you’re looking to make the recipe gluten-free.
Sea salt and black pepper, to taste
FOR SERVING
Pesto (4 tbsp)
Roma tomato, chopped (1) You can also use cherry tomatoes.
Parmesan, grated (2 tbsp) – Use nutritional yeast for a dairy-free option.
How to Make Crockpot Pesto Chicken
Step 1. Place the chicken breasts into the crockpot. Season them with Italian seasoning, salt, and black pepper. Make sure you cover both sides.
Step 2. Cover the chicken breasts with the pesto, ensuring you cover all the chicken.
Step 3. Cook the chicken for 4-5 hours on low heat. When you are 2 hours in, check the chicken to make sure it’s not too dry.
If it’s dry, you can add vegetable broth. Try to check it every hour or so to prevent overdried chicken.
Step 4. When it’s fully cooked, cover the chicken with more pesto (around 1 tbsp per chicken breast). You can also use another sauce you love.
Step 5. Top it up with chopped tomato and grated parmesan when you are ready to serve.

When you are ready to have it again, place it in the microwave or on the stove. I recommend using the stove since it avoids overly dry chicken.

Ingredients
- 2 lbs chicken breasts skinless and boneless
- 2 tbsp Italian seasoning
