Crockpot Pesto Chicken
This crockpot pesto chicken is a simple slow cooker recipe with tender chicken, basil pesto, and parmesan. It is high protein, low carb and gluten-free.

Servings: 4 chicken breasts
- 2 lbs chicken breasts skinless and boneless
- 2 tbsp Italian seasoning
- 1 cup pesto
- Sea salt and black pepper to taste
For Serving
- 4 tbsp pesto
- 1 Roma tomato chopped
- 2 tbsp parmesan grated
Add the chicken breasts into a crockpot. Seasoning with Italian seasoning, salt, and black pepper on all sides.
Cover the chicken breasts with pesto using a tablespoon, covering all of the chicken.
Cook for 4-5 hours on low heat until the chicken fully cooks through. 2 hours in, check whether the chicken is not dry. If dry, pour in some vegetable broth and continue checking accordingly.
Cover the chicken with a little bit more pesto (1 tbsp per chicken breast) or any other sauce you love. Top up with chopped tomato and grated parmesan. Serve with rice, potatoes, pasta, or vegetables.
