How I Would Modify This Recipe

  • Boost the protein: Add more chicken thighs or rotisserie chicken.
  • Add more veggies: Toss in chopped spinach, kale, or peas in the last few minutes of cooking to add more nutrients and color.
  • Make it spicy: Add a pinch of red pepper flakes or a dash of hot sauce.

My Tips & Tricks

  1. Sear the chicken in batches: If the chicken doesn’t fit the pot, cook the chicken in batches. This will allow every piece to brown, adding flavor and color.
  2. Whisk the cornstarch: You want the cornstarch mix to be completely smooth, without any lumps. Otherwise, it can change the texture of the soup.
  3. Let the soup rest: Let the soup rest for 5 minutes before serving. This will allow the flavors to settle and deepen slightly.

My Storage Tips

This is a great recipe for meal prepping. Let the soup cool, then transfer it to an airtight container.

Place it in the fridge and keep it there for 4-5 days.

If you want to keep it longer, you can freeze it for up to 3 months. However, dairy sometimes separates after freezing, so it might change the consistency of the soup.

When you want to have this soup again, place it on the stove over medium-low heat and let it warm through. Stir occasionally, and add a bit of broth if the soup is too thick.
