Cottage Cheese Protein Banana Bread with Blueberries

Ingredients

  • 2 ripe bananas mashed
  • 3 medium eggs
  • 1/2 cup cottage cheese blended
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 1/2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp cardamom
  • 1 cup + a few blueberries

Instructions

  • Preheat the oven to 350F. Line a loaf pan with parchment paper and grease it.
  • In a large bowl, mix together mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract.
  • In a smaller bowl, combine almond flour, baking soda, and cardamom.
  • Add the almond flour mixture to the wet ingredients, and mix until fully combined.
  • Finally, fold in 1 cup of blueberries.
  • Pour the batter into the loaf pan and top up the bread with a few blueberries, spread them evenly to prevent the top from sinking in from the blueberries.
  • Bake in the oven for 50 minutes. Cover with aluminum foil after 30 minutes to prevent the top from burning.
  • Remove from the oven, allow the bread to cool down and serve.
