They are a perfect treat if you want to have a different breakfast or if you are having guests coming over for some afternoon tea.

Quick Chocolate Protein Cottage Cheese Scones

Ingredients and Substitutes

All-purpose flour (1 ½ cup) – You can replace some of the flour with more vanilla protein powder to make it higher in protein.

Vanilla protein powder, or all-purpose flour (½ cup) – If you want to make it extra indulgent, try using a chocolate-flavored protein powder.

Cacao powder (½ cup) – Replace with Dutch-process cocoa.

Baking soda (1 tsp)

Baking powder (1 tbsp)

Brown sugar (1/3 cup)

Cottage cheese, blended (1 cup) – Swap with ricotta cheese or Greek yogurt.

Unsalted butter, cold (½ cup) – If you want a plant-based version, you can use plant-based butter.

EGG WASH

Egg (1)

Water (1 tsp)

GLAZING (OPTIONAL)

Dark chocolate chips (2 tbsp) – Swap for dark cacao nib or milk chocolate chips for a sweeter option.

Coconut oil (1 tsp) – or regular butter.

How to Make Chocolate Protein Cottage Cheese Scones

Step 1. Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper. Grab a bowl and add the all-purpose flour, protein powder, cacao powder, baking soda, baking powder, and brown sugar.

Step 2. Give the dry ingredients a good stir.

Step 3. Add the blended cottage cheese.

Step 4. Combine until you get a dry, crumbly dough.

Step 5. Cut the butter into small cubes and add them to the dough.

Step 6. Start kneading the dough using your hands until it forms a ball of dough.

Ingredients 

  • 1 ½ cup all-purpose flour
  • ½ cup vanilla protein powder or all-purpose flour
  • ½ cup cacao powder
  • 1 tsp baking soda
  • 1 tbsp baking powder
  • 1/3 cup brown sugar
  • 1 cup cottage cheese blended
  • ½ cup unsalted butter cold

Egg wash

  • 1 egg
  • 1 tsp water

Glazing (Optional)

  • 2 tbsp dark chocolate chips
  • 1 tsp coconut oil

Instructions 

  • Preheat the oven to 400F and cover a baking sheet with parchment paper.
  • In a large bowl, combine all-purpose flour, protein powder, cacao powder, baking soda, baking powder, and brown sugar.
  • Add in blended cottage cheese and mix with a spoon, you’ll end up with very crumbly, dry dough that cannot stick together.
  • Now, cut butter into small cubes and sprinkle them into the dough, spreading them all around, knead with your hands until it forms a ball of dough.
  • Add some flour to the counter, place the dough and roll it with a rolling pin until it forms a 7-inch wide circle.
  • Cut the dough into 8 triangles and place each piece on the baking sheet, leaving plenty of space in between.
  • In a small bowl, whisk the egg with water to create egg wash. Then, using a brush, cover each scone with the mixture.
  • Bake in the oven for 18-20 minutes and let them cool down before serving.
  • Add dark chocolate chips and coconut oil to a small bowl and microwave in 30s increments until the chocolate melts. Mix the ingredients and pour the chocolate over each scone to create the glazing.

    I substituted ricotta cheese for the cottage cheese. Added an additional 1/2 cup of protein powder for a total of 80 grams of protein. Which for 8 scones would be about 10 grams of protein per scone. Next time Iโ€™ll decrease the cooking time (they are a bit dry) and may add an egg or some milk. The dough was very dense but they taste amazing.
