They give you that sweetness in baking, so you don’t have to rely on added sugars.

Ingredients and Substitutes

All-purpose flour, based on how ripe the bananas are (3 1/2 – 4 cups) – You can use whole wheat flour if you want to make them higher in fiber and heartier, or use a gluten-free flour blend.

Baking powder (2 tsp)

Cinnamon (1 tsp) – Swap with nutmeg or pumpkin pie spice.

Salt (1/4 tsp)

Egg (1 medium)

Maple syrup (1/4 cup) – Replace with honey, agave, or brown sugar. If you want to remove the added sugars, you can use a sugar-free sweetener like erythritol.

Mashed bananas (1 cup, about 3 medium ripe bananas) – Substitute with applesauce or sweet potato puree.

Cottage cheese, 2% (1 cup) – Swap with ricotta or Greek yogurt.

Vanilla extract (1 tsp) – You can also use almond extract or vanilla bean paste.

Butter, cold and grated (1/3 cup) – Replace with ghee, coconut oil, or any dairy-free option.

Topping

Banana, sliced (1) – Switch with thinly sliced apples, pears, or fresh berries if you want a different flavor.

Egg Wash

Egg (1 medium)

Water (1 tsp)

Glazing

Greek yogurt (4 tbsp) – Swap with coconut yogurt or any other plant-based yogurt.

Maple syrup (4 tbsp)

How to Make Banana Cottage Cheese Scones

Step 1. Preheat your oven to 425°F and prepare a baking sheet by lining it with parchment paper. Grab a large bowl and add the all-purpose flour, baking powder, cinnamon, and salt.

Step 2. Give the ingredients a good stir.

Step 3. In another bowl, add the egg, maple syrup, mashed bananas, cottage cheese, and vanilla extract.

Tip: If the dough is too sticky, flour the rolling pin.

Step 11. Place the scones on the baking sheet, making sure you leave plenty of space between them. And, if they don’t fit, use another baking sheet.

Step 13. Whisk the egg and water to form a batter. Use a brush and cover the scones with the mix.

Step 14. Place the scones in the oven and bake them for 18-20 minutes.

Step 16. When the scones have cooled down, glaze them with the Greek yogurt and maple syrup mix.

How I Would Modify This Recipe

  • Add Some Crunch: Fold in ½ cup of toasted walnuts or pecans when you add the butter.
  • Make It Extra Indulgent: Add ½ cup of semisweet chocolate chips or dark chocolate chunks. Bananas and chocolate are just the perfect pairing.
  • GlutenFree: Use a 1-to-1 gluten-free flour blend. Just make sure you use a blend that has xanthan gum to make sure it keeps the same texture.
  • Add More Fruit: Toss in some frozen or fresh blueberries. Just be careful when mixing so you don’t turn the dough purple.

My Tips & Tricks

  1. Don’t Overmix: When you combine the wet and dry ingredients, stop mixing when the flour disappears. Overmixing can make the scones tough and rubbery.
  2. Adjust the Texture: If the dough is too sticky, add a bit more flour. But don’t add too much since it might result in dry scones. Add just enough until it’s manageable.
  3. Grate the Butter: Make sure you use frozen or very cold butter. It makes it easier to grate.

My Storage Tips

If you have any leftovers, keep them in an airtight container at room temperature for up to 2 days. You can extend their life to 5-6 days if you place them in the fridge.

And, if you want to keep them for longer, you can wrap them individually and place them in a freezer-safe bag for up to 3 months.

Now, if you want to bring them back to life, place them in the microwave for 15-20 minutes, or in the toaster at 300°F for 5 minutes (this is my favorite way to reheat them).

Ingredients 

  • 3 1/2 – 4 cups all-purpose flour based on how ripe the bananas are
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 medium egg
  • 1/4 cup maple syrup
  • 1 cup mashed bananas about 3 medium ripe bananas
  • 1 cup cottage cheese 2%
  • 1 tsp vanilla extract
  • 1/3 cup butter cold and grated

Topping

  • 1 banana sliced

Egg Wash

  • 1 medium egg
  • 1 tsp water

Glazing

  • 4 tbsp Greek yogurt
  • 4 tbsp maple syrup

Instructions 

  • Preheat the oven to 425F and line a baking sheet with parchment paper.

  • In a medium bowl, whisk together egg, maple syrup, mashed bananas, cottage cheese, and vanilla extract.
  • Pour the wet ingredients into the dry ones. Mix with a silicone spatula until well combined. It might be on the drier side, that’s ok.
  • Now, grate the cold butter into the dough and fold it to disperse it throughout the dough.
  • Finally, roll the dough into a ball and place it on a floured countertop. Roll the dough until it’s 8-9 inches wide and cut it into 8 triangles. Feel free to flour the rolling pin if the dough is too sticky, and it should be!
  • Place the scones on the baking sheet, space them out, and if they don’t fit, use two baking sheets.
  • Top up each scone with 1-2 slices of banana.
  • Whisk together 1 egg with water, and then, using a brush, cover the scones with the mixture.
  • Bake in the oven for 18-20 minutes.
  • Once done, mix together Greek yogurt with maple syrup to form the glazing and cover the scones with it.
