But the best thing about this recipe is that while it looks like a complicated dish, the truth is that it’s so easy; that’s why I don’t mind when they ask to have it for dinner.

The orzo gets toasted in olive oil and garlic before absorbing white wine and chicken stock. The cream and Parmesan make it irresistibly creamy, and the chicken adds the protein boost.

How I Would Modify This Recipe

  • Make it lower in carbs: Reduce the orzo to ½ cup and add other veggies like spinach, zucchini, or cauliflower florets.
  • Go vegetarian: Skip the chicken and add more spinach or white beans. Swap the chicken stock for vegetable broth.
  • Add some heat: If you love spicy food, add ½ teaspoon of red pepper flakes to the garlic and onion base.

My Tips & Tricks

  1. Use warm chicken broth: Adding cold liquid to a hot pan can cause the temperature to drop, which can slow the cooking process. Try warming the stock before you add it (if it’s possible).
  2. Grate your own Parmesan cheese: Pre-grated Parmesan cheese often has anti-caking agents that prevent it from melting completely. It’s best to grate fresh Parmesan cheese.
  3. Let the orzo rest before serving: Let it rest for 3-5 minutes before serving to allow the sauce to thicken and the flavors to settle.

My Storage Tips

It’s difficult to have any leftovers, but if you do, place them in an airtight container. You can keep them in the fridge for up to 3-4 days. The orzo might absorb some of the liquid from the sauce, so it might thicken just a bit.

You can also place it in the freezer, but keep in mind that since it’s a cream-based sauce, it might slightly separate when you thaw it.

When you are ready to have it again, place it over the stove at low heat and cook for 5-7 minutes or until it’s all warmed through. If it’s too thick, try adding a splash of chicken broth.
