Fire-roasted diced tomatoes (2 14 oz cans) – Replace with regular tomatoes if you don’t have any fire-roasted diced tomatoes. However, I would recommend keeping this ingredient since it adds a lot of flavor.
Parmesan cheese, grated (2 tbsp) – You can also use Asiago cheese or nutritional yeast for a plant-based option.
How to Make Chilli Chicken Stir Fry
Step 1. Grab a large bowl and add the chicken, garlic powder, chili powder, salt, and black pepper.
Step 2. Give everything a good mix to coat the chicken with all the spices.
Step 3. Place a skillet over medium-high heat, and add the avocado oil and chicken.
Step 4. Cook it for 7-10 minutes. Make sure you consistently stir the chicken to ensure it cooks evenly.
Step 5. Add the green bell peppers, onions, and garlic cloves. Mix to combine all the ingredients.
Step 6. Pour the diced tomatoes, and cover the pan with a lid.
Step 7. Let the chicken simmer for 5 minutes. If you feel like the chicken is burning up, lower the heat. Mix everything and ensure that the chicken is fully cooked and the peppers soft.
Step 8. When you are ready to eat, garnish with Parmesan cheese.

Instructions

- Now, add in green bell peppers, onion, and garlic cloves. Stir well to combine all of the ingredients. Pour in the 2 cans of diced tomatoes, cover with a lid, and let it simmer for 5 minutes. Lower the heat if you feel it’s burning up.
- Stir well and make sure the chicken is fully cooked and the peppers are soft before removing from the stove. Garnish with parmesan before serving.
