Ingredients and Substitutes

OVERNIGHT OATS

Rolled oats (1 cup) – Replace with quick oats (they have a softer texture) or steel-cut oats (they stay crunchier).

Chia seeds (2 tbsp) – Swap with ground flaxseeds or psyllium husk.

Hemp seeds (1 tbsp) – Substitute with sunflower seeds or finely chop almonds.

Flaxseed meal (1 tbsp) – You can also use whole flaxseeds or use more chia seeds.

Date, finely chopped (1) – Replace with raisins or dried cranberries. 

Grated carrots (2/3 cup)

Cinnamon (1 tsp) – Instead of cinnamon and nutmeg, replace both with pumpkin spice.

Nutmeg (1/2 tsp)

Vanilla extract (1 tsp) – Swap with almond extract or vanilla paste.

Cottage cheese, blended (3/4 cup) – Substitute with plain Greek yogurt or mashed silken tofu (for a plant-based and dairy-free option).

Unsweetened almond milk, plus more as needed (1/2 cup) – Use any non-dairy milk like oat, soy, cashew milk, or regular milk.

GREEK YOGURT TOPPING

Plain Greek yogurt (2/3 cup) – Choose coconut yogurt, skyr, or blended cottage cheese.

Maple syrup (1 tsp) – Replace with agave syrup, honey, coconut sugar, or a sugar-free syrup.

Step 1. Grab a medium bowl and combine the rolled oats, chia seeds, hemp seeds, flaxseeds, chopped date, grated carrots, cinnamon, and nutmeg.

Step 2. Now, add the cottage cheese, vanilla, and almond milk.

Step 3. Combine everything thoroughly. You can use a hand mixer to blend everything until it creates a smooth batter. If it’s too thick, try adding a bit more almond milk.

Step 4. In a small bowl, mix the Greek yogurt with 1 tsp of maple syrup. Give the ingredients a good stir.

  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp flaxseed meal
  • 1 date finely chopped
  • 2/3 cup grated carrots
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 3/4 cup cottage cheese blended
  • 1/2 cup unsweetened almond milk plus more as needed

Greek Yogurt Topping

  • 2/3 cup plain Greek yogurt
  • 1 tsp maple syrup

Optional Toppings

  • Pumpkin seeds
  • Cinnamon
  • Chopped walnuts

Instructions 

  • In a medium bowl, combine rolled oats, chia seeds, hemp seeds, flaxseed meal, chopped date, grated carrots, cinnamon, nutmeg, vanilla, cottage cheese, and almond milk.
  • Stir well until everything is evenly combined. Or use a hand blender to combine all the ingredients and mix them until smooth. If the mixture seems very thick, add a small splash of almond milk.
  • Divide the oat mixture evenly between 2 jars.
  • In a small bowl, mix Greek yogurt with 1 tsp maple syrup until smooth.
  • Spoon the sweetened Greek yogurt evenly over the oat mixture to create a layer on top of each jar.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Before serving, top with pumpkin seeds, cinnamon, or chopped walnuts if desired.
