Large eggs (4)

Maple syrup (2 tbsp) – Replace with honey, agave, or a sugar-free alternative to reduce the carb content.

How I Would Modify This Recipe

  • Add more flavor: Stir in a teaspoon of cinnamon, a handful of chocolate chips, or a tablespoon of chia seeds.
  • Lower the carbs: Reduce the oats to ½ cup and add an extra ¼ cup of almond flour. Also, make sure you use a sugar-free maple syrup.
  • Make it dairyfree: Switch the cottage cheese to silken tofu and use a plant-based protein powder.

My Tips & Tricks

  1. Blend until smooth: The smoother the batter, the less you’ll taste the cottage cheese. It’s actually going to be more like a custard.
  2. Toss the blueberries in flour: Coat them in a little almond flour before adding them to prevent them from sinking to the bottom.
  3. Let it cool completely: Slicing too early leads to crumbly squares. Be patient! It’s worth the wait.

My Storage Tips

Place any leftovers in an airtight container and keep them there for up to 5-6 days. You can then place them in the microwave for 20-30 seconds if you want it slightly warm or enjoy it cold.

You can also wrap them individually and freeze them for 3 months.
