Sheet Pan Chicken Fajitas

Ingredients

  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 ½ lbs chicken breasts boneless, skinless (cut into strips)
  • 3 bell peppers cut into strips (use whatever colors you want)
  • 1 medium white onion sliced
  • 1 lime juiced
  • fresh cilantro chopped

For Serving:

  • 12 small corn shells
  • sour cream grated cheese, guacamole, salsa (OPTIONAL)

Instructions

  • Preheat the oven to 400F and oil the baking sheet.
  • In a bowl, combine chilli powder, garlic powder, smoked paprika, cumin, salt, black pepper, and olive oil.
  • Add chicken strips to the baking sheet, cover with the mix of olive oil and spices.
  • Add in the bell peppers, white onion and toss to combine.
  • Cook in the oven for around 20 minutes until the chicken is fully cooked.
  • Squeeze out the lime juice all over the sheet pan and sprinkle over chopped cilantro.
  • Serve in tortillas.
