Preheat the oven to 400F and line a large baking sheet with parchment paper.
In a large bowl, combine all-purpose flour, salt, baking powder, soda, and cane sugar.
In a smaller bowl, whisk the egg, cottage cheese, orange juice, and orange zest together.
Finally, add the wet ingredients to the dry ingredients and mix slowly with a rubber spatula until the dough is combined. It will be dry and crumbly, that’s normal.
Now, grate the very cold butter (ideally out of a freezer) and start kneading the dough to spread the butter around. It should eventually form a ball of dough.
Flour the surface of the counter and place the ball of dough on it. With a rolling pin, roll it into a 7-inch circle.
Cut the dough into 8 triangles and place them on the baking sheet.
In a small bowl, whisk together egg and water. With a brush, cover each scone with the mixture and bake in the oven for 18-20 minutes until lightly golden.
Let the scones cool down on the baking sheet.
Optional: while you mix together orange juice with powdered sugar to form glazing. Cover the scones with it.
