Orange Cottage Cheese Scones

Ingredients

  • 2 1/2 cups all-purpose flour
  • ½ tsp salt
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/3 cup cane sugar
  • 1 large egg
  • 1 cup cottage cheese blended
  • 4 tbsp fresh orange juice
  • 2 tsp orange zest grated
  • ½ cup unsalted butter frozen for 10 minutes, grated

Egg wash

  • 1 egg
  • 1 tsp water

Glazing (optional)

  • 1 tbsp orange juice
  • 3 tbsp powdered sugar

Instructions

  • Preheat the oven to 400F and line a large baking sheet with parchment paper.
  • In a large bowl, combine all-purpose flour, salt, baking powder, soda, and cane sugar.
  • In a smaller bowl, whisk the egg, cottage cheese, orange juice, and orange zest together.
  • Finally, add the wet ingredients to the dry ingredients and mix slowly with a rubber spatula until the dough is combined. It will be dry and crumbly, that’s normal.
  • Now, grate the very cold butter (ideally out of a freezer) and start kneading the dough to spread the butter around. It should eventually form a ball of dough.
  • Flour the surface of the counter and place the ball of dough on it. With a rolling pin, roll it into a 7-inch circle.
  • Cut the dough into 8 triangles and place them on the baking sheet.
  • In a small bowl, whisk together egg and water. With a brush, cover each scone with the mixture and bake in the oven for 18-20 minutes until lightly golden.
  • Let the scones cool down on the baking sheet.
  • Optional: while you mix together orange juice with powdered sugar to form glazing. Cover the scones with it.
