- 2 cups dry farfalle pasta
- 1 lb Italian sausage meat
- 2 garlic cloves minced
- 1 tbsp olive oil
- 1 cup cherry tomatoes diced
- 2 tsp paprika
- 1/2 tsp chili flakes
- A pinch of salt
- 1/4 tsp black pepper
- 2 tbsp tomato puree
- 1/2 cup fresh spinach
Garnish
- Parmesan finely grated, optional
Cook the farfalle pasta al dente according to the packaging instructions.
While the pasta is being made, place a large skillet over medium-high heat. Add in the Italian sausage and break it apart until it's almost cooked through. It should take 6-7 minutes.
Add in the garlic and olive oil and cook until the sausage meat is no longer pink.
Add in the cherry tomatoes, paprika, chili flakes, salt, and black pepper. Give it a good mix. Cook for another 3-4 minutes.
Now, stir in the tomato puree and fresh spinach. Cook for another 2 minutes until the spinach wilts.
Once the pasta is cooked and drained, add it to the skillet. Combine all of the ingredients to cover the pasta with the sauce. Optionally, sprinkle with grated Parmesan before serving.
