Pumpkin Protein Balls with Almond Flour
These soft, no-bake pumpkin protein balls are full of warm spices and chocolate chips. They are gluten-free and pack 4 grams of protein per bite.

Dry
- 1 1/2 cups almond flour
- 1/4 cup protein powder
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
Wet
- 2/3 cup cashew butter or other nut butter
- 3 tbsp pumpkin purée
- 1/3 cup maple syrup
- 1/2 tsp vanilla extract
Mix-ins
- 1/4 cup mini chocolate chips
In a large bowl, stir together almond flour, protein powder, pumpkin pie spice, salt, and mini chocolate chips.
In a separate bowl, mix cashew butter, pumpkin purée, maple syrup, and vanilla until smooth.
Add the wet mixture to the dry ingredients and stir until a thick dough forms.
If the dough feels too soft to roll, refrigerate for 15-20 minutes first.
Scoop about 1 tbsp of dough at a time and roll into balls.
Place on a plate or tray and refrigerate for at least 1 hour to firm up.
Store in an airtight container in the refrigerator for up to 1 week.
