Mediterranean Chicken Bake

- 4 chicken breasts boneless, skinless
- Salt and black pepper to taste
- 1 tbsp paprika
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried basil
- 2 cups cherry tomatoes halved
- 1 cup Kalamata olives pitted and halved
- 1 large red onion thinly sliced
- 1 red bell pepper thinly sliced
- 6 cloves garlic minced
- 1/4 cup extra virgin olive oil
Garnish
- 1/4 cup feta cheese crumbled
- Fresh parsley chopped
- Sliced lemon
Preheat your oven to 400F and lightly grease a 9x13 casserole dish.
Place the chicken breasts in the dish. Season both sides with salt, black pepper, paprika, dried oregano, thyme, and basil.
Add the cherry tomatoes, olives, red onion, bell pepper, and garlic around the chicken. Drizzle everything with olive oil and gently toss the vegetables to coat.
Bake for 35–40 minutes, or until the chicken is fully cooked.
Once done, remove from the oven and sprinkle the feta cheese over the top.
Garnish with fresh parsley and sliced lemon.
