Lemon Cottage Cheese Overnight Oats

Servings: 2 jars
- 1 cup unsweetened almond milk
- 2 cups cottage cheese
- 1 tbsp maple syrup
- 1 cup rolled oats
- 2 tbsp chia seeds
- 4 tbsp milled flaxseed
- 1 tsp ground cinnamon
- zest of 1 lemon
- 2 tbsp lemon juice
- extra lemon zest for topping
Add almond milk, cottage cheese, maple syrup, and lemon juice to a blender. Blend until completely smooth.
In a medium bowl, combine rolled oats, chia seeds, milled flaxseed, and cinnamon.
Pour the blended cottage cheese mixture over the dry ingredients.
Add the lemon zest and stir until well combined.
Divide evenly between 2 jars and cover.
Refrigerate for at least 4 hours or overnight.
Stir before serving, then top each jar with a little extra lemon zest.
If needed, add a small splash of almond milk to loosen the oats.
