Goat Cheese Stuffed Dates
These goat cheese stuffed dates are easy to make, sweet and savory, coconutty and nutritious. A perfect easy appetizer or a healthy snack when you're craving for something a little more sophisticated. This is a very easy smple recipe I love making when I'm craving something quick, sweet and a little savory.

- 20 large Medjool dates
- 1 cup goat cheese around 9 oz
- 1 cup desiccated coconut
- 1 3/4 cup blueberries
Cut each date in half and remove the seeds.
Fill each half with about 1 tsp of goat cheese. Then, cover it with about 1 tsp of desiccated coconut, really pressing it on – the more, the sweeter.
Top up each half with 2 blueberries.
