Ingredients

  • 4 beets cooked & grated
  • 2 carrots grated
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • a pinch of salt & black pepper
  • 1 tbsp parsley chopped

Instructions

  • Grate beets and carrots.
  • Combine balsamic vinegar, olive oil, honey, salt, and black pepper in a bowl.
  • Add beets and carrots into a bowl. Cover with the dressing mixture and toss the salad together.
  • Sprinkle with chopped parsley before serving.
