- 4 beets cooked & grated
- 2 carrots grated
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp honey
- a pinch of salt & black pepper
- 1 tbsp parsley chopped
Grate beets and carrots.
Combine balsamic vinegar, olive oil, honey, salt, and black pepper in a bowl.
Add beets and carrots into a bowl. Cover with the dressing mixture and toss the salad together.
Sprinkle with chopped parsley before serving.
