- 1 tbsp extra virgin olive oil
- 16 oz ground turkey
- 1 large white onion diced
- 1 red bell pepper diced
- 1 medium zucchini diced
- 28 oz can diced tomatoes
- 15 oz can black beans drained and rinsed
- 15 oz can corn kernels drained
- 2 tbsp tomato paste
- 4 cloves garlic minced
- 2 tsp chili powder
- 2 tsp cumin
- 1 tbsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes
Heat a sauté pan over medium heat and add the olive oil. Add the ground turkey, breaking it apart as it cooks, and sauté until fully cooked and lightly browned. It should take 7-10 minutes.
Transfer the cooked turkey to a crockpot. Add all remaining ingredients and mix well so everything is evenly combined.
Cover and cook on low for 8–9 hours or on high for 4-5 hours, stirring only once or twice during cooking.
Serve hot. If desired, garnish with sour cream, shredded cheddar, chopped red onion, chives, or crispy bacon crumbles.
