Cottage Cheese Blondie Brownies

- 1 3/4 cups cottage cheese 2% blended
- ½ cup maple syrup
- ⅓ cup smooth almond butter
- 1 cup oat flour
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup cocoa powder
- ¼ cup dark chocolate chips
- 1 tbsp milk
- ½ cup almond slices
Preheat the oven to 350F or 320F fan. Prepare a baking dish (9’’x7’’) or a square baking dish (8’’x8’’) and line it with parchment paper.
In a medium bowl, combine 1 ¼ cups of cottage cheese with maple syrup and almond butter.
Now, sift the oat flour and baking powder into the wet ingredients and mix throughout to combine and form a thick batter. Add in the salt and mix it in.
Take 2/3 of the batter and sift the cocoa powder and the remaining 1/2 cup cottage cheese into it. Add a splash of milk if the mixture is too thick. Fold in the chocolate chips.
Cover the bottom of the baking dish with cocoa batter and level it out. Then, cover with the remaining 1/3 of the light batter and spread it out on top of the chocolate batter.
Using a brush, spread the 1 tbsp of milk on top of the batter to smooth out the top.
Cover with almond slices evenly and press them in with a spoon.
Bake in the oven for 30 minutes. Remove and let it cool down inside the baking dish before slicing.
