Preheat the oven to 350F. Line a baking sheet with parchment paper and oil it with a bit of coconut oil.
Combine coconut flour with protein powder and baking soda in a bowl.
In a separate bowl, combine coconut oil, honey, apple spice, and vanilla extract. Stir vigorously until coconut oil and the ingredients are well combined.
Add the coconut flour mixture into the coconut oil mixture. Combine well until it forms one dough ball.
Form the dough into 19 balls.
Flatten them out with a spoon or fingers to form cookies.
Bake in the oven for 8-10 minutes until the edge crispens up.
Remove the cookies from the oven and let them cool down before serving.
