  • Preheat the oven to 350F. Line a baking sheet with parchment paper and oil it with a bit of coconut oil.
  • Combine coconut flour with protein powder and baking soda in a bowl.
  • In a separate bowl, combine coconut oil, honey, apple spice, and vanilla extract. Stir vigorously until coconut oil and the ingredients are well combined.
  • Add the coconut flour mixture into the coconut oil mixture. Combine well until it forms one dough ball.
  • Form the dough into 19 balls.
  • Flatten them out with a spoon or fingers to form cookies.
  • Bake in the oven for 8-10 minutes until the edge crispens up.
  • Remove the cookies from the oven and let them cool down before serving.
