Ingredients

  • 2 medium chicken breasts cooked and shredded
  • 2 ripe avocados pitted and diced
  • 1 lb cooked rotini pasta cooled down
  • 1/2 small red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh basil chopped
  • Salt and black pepper to taste

Dressing

  • 1/4 cup white wine vinegar
  • 1 tbsp Italian seasoning
  • 1/2 cup extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  • Add all of the dressing ingredients into a jar and shake to combine.
  • Combine the rest of the ingredients in a large bowl. Add in the dressing and toss to combine.
