Carrot Cake Energy Bites

Ingredients

  • 1/2 cup carrots chopped
  • 1/4 cup soft pitted dates
  • 1/2 cup pecans
  • 2 tbsp desiccated coconut
  • 1/2 cup oats
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger powder
  • 3 tbsp crunchy peanut butter
  • 1 tsp vanilla bean paste or vanilla extract
  • 1/2 tbsp maple syrup

Instructions

  • Add chopped carrots and soft dates into a food processor and pulse for about 1 minute until carrots and dates are cut into small pieces.
  • Add pecans, coconut, oats, cinnamon, nutmeg, ginger, peanut butter, vanilla paste and maple syrup. Pulse through until all of the ingredients combine and create a sticky texture. You’ll want to stop in between and push down the mixture on the edges.
  • Add the mixture into a bowl and take out a small cookie scoop (about 1 tbsp in size). Scoop out the mixture and roll it in your hands to create small bites.
  • Eat immediately or store in containers for later. I like to keep mine in the fridge.
