- 1/2 cup carrots chopped
- 1/4 cup soft pitted dates
- 1/2 cup pecans
- 2 tbsp desiccated coconut
- 1/2 cup oats
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger powder
- 3 tbsp crunchy peanut butter
- 1 tsp vanilla bean paste or vanilla extract
- 1/2 tbsp maple syrup
Add chopped carrots and soft dates into a food processor and pulse for about 1 minute until carrots and dates are cut into small pieces.
Add pecans, coconut, oats, cinnamon, nutmeg, ginger, peanut butter, vanilla paste and maple syrup. Pulse through until all of the ingredients combine and create a sticky texture. You’ll want to stop in between and push down the mixture on the edges.
Add the mixture into a bowl and take out a small cookie scoop (about 1 tbsp in size). Scoop out the mixture and roll it in your hands to create small bites.
Eat immediately or store in containers for later. I like to keep mine in the fridge.
