Servings: 4 chicken breasts
- 1 tbsp olive oil
- 2 large chicken breasts
- salt and black pepper to taste
- 1 tbsp Italian seasoning
- 2 cups broccoli florets blanched, chopped
- 6 strips bacon cooked, chopped
- ⅓ cup mozzarella cheese shredded
- 1 cup cheddar cheese shredded
Preheat the oven to 400F. Grease a casserole dish with olive oil.
Take the chicken breasts and slice them in half horizontally. That will leave you with 4 thin chicken breasts to work with.
Place chicken breasts on the bottom of the casserole, season with salt and black pepper, and sprinkle with Italian seasoning.
Cover with chopped broccoli, bacon, mozzarella cheese and cheddar cheese.
Bake in the oven, uncovered, for 20-25 minutes until the chicken has cooked through completely.
