- 3 large eggs
- ½ cup cane sugar
- 2 tsp vanilla extract
- 2 cups almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 cups diced apples
Preheat the oven to 350F. Line an 8-inch springform cake pan with parchment paper and grease it.
Mix eggs, cane sugar, and vanilla extract in a large bowl using a hand mixer. Do it for 3-4 minutes until the ingredients are well combined.
In a medium bowl, combine almond flour, baking powder, and salt.
Add the dry ingredients into the wet ones and mix with a hand mixer on a low setting until well combined.
Fold in the diced apples into the batter and pour it into the springform.
Level the batter and top up with sliced almonds evenly. Bake in the oven for 40-45 minutes.
Once done, remove from the oven and let the cake cool down inside the springform for around 30 minutes.
