Almond Flour Apple Cake

Ingredients

  • 3 large eggs
  • ½ cup cane sugar
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups diced apples

Topping

  • 1/2 cup sliced almonds

Instructions

  • Preheat the oven to 350F. Line an 8-inch springform cake pan with parchment paper and grease it.
  • Mix eggs, cane sugar, and vanilla extract in a large bowl using a hand mixer. Do it for 3-4 minutes until the ingredients are well combined.
  • In a medium bowl, combine almond flour, baking powder, and salt.
  • Add the dry ingredients into the wet ones and mix with a hand mixer on a low setting until well combined.
  • Fold in the diced apples into the batter and pour it into the springform.
  • Level the batter and top up with sliced almonds evenly. Bake in the oven for 40-45 minutes.
  • Once done, remove from the oven and let the cake cool down inside the springform for around 30 minutes.
